I am all about easy recipes and this quinoa with roasted vegetables is no exception.  Not only is this quinoa with roasted vegetables easy, but it calls for ingredients you may already have in your kitchen!  It’s going to be one of my go to recipes for sure.  Great in summer or winter.  Eat it hot or cold.  If you like quinoa recipes, you may also like this and this.

I was really amazed that this dish had so much flavor with such simple ingredients.  Another thing you can probably do with this is to cook the quinoa in vegetable broth instead of water.  It should add an even deeper level of flavor.  This dish is vegan and gluten free.  I hope you enjoy it.

Miso Stir Fry with Cauliflower Rice

I know many of you avoid soy products, but I think it’s quite okay to include some fermented soy products in your diet.  Asian cultures have been eating them for years.  The real concern comes when you are already ingesting a large amount of soy found in processed foods.  As long as you avoid processed foods, a little soy will not be a big deal.  Since most soy products in this country are GMO, it is very important to look for soy products that have been non GMO verified.  This miso stir fry with cauliflower rice was both delicious and filling.  I added tofu to mine, but you could really use any protein you like in this dish.

This miso stir fry was created by my husband.  I came up with the idea, and he put it all together.  He is way better with the savory dishes than I am. I wanted to do cauliflower rice again because I loved it so much in this dish.  This miso stir fry may seem like it has a lot of steps, but you can make the tofu and cauliflower rice ahead of time.  That is what I did.

Easy Roasted Asparagus

I am so happy Spring is here.  I love all the spring fruits and veggies.  I picked up some asparagus the other day and I knew I wanted to roast them.  This Easy Roasted Asparagus is so easy and fool proof!  I promise you will love it.  This roasted asparagus recipe is very similar to my Easy Roasted Broccoli and my Honey Balsamic Brussel Sprouts.

I don’t know about you, but I don’t like my asparagus to be completely soft.  I like a little crunch still left to it.  That is why I only roasted mine for 10 minutes.  If you like a softer asparagus, feel free to keep it in the oven longer.

Maple Cinnamon Parsnip Chips. I love making homemade chips.  These yummy homemade chips are my latest creation.  The maple and cinnamon flavors go so well in this easy parsnip chip recipe.

If you don’t know what parsnips are, they are in the same family as carrots and have a mild, sweet flavor.  These maple parsnip chips are so good!

Homemade Diced Tomatoes

There is a lot of talk about BPA in canned goods.  BPA is used in many products.  Canned goods are a concern because BPA is used in the linings of canned goods.  Why should you avoid BPA?  You can read all about that here.  Eden Foods makes BPA free cans for their beans, but they don’t have canned tomatoes.  According to the website, How Stuff Works, most organic brands of canned tomatoes do still use BPA in their liners.  The article is very interesting because they actually do rate brands. You may be surprised at the ratings.  The good news is, it’s so easy to make your own diced tomatoes!  It literally take just a few minutes.  These homemade diced tomatoes would be perfect in my Crock Pot Tomato Sauce or my Sweet Potato Chili.
