Adzuki Bean Veggie Burgers

I love veggie burgers.  It seems you readers love them too because my Sweet Potato Veggie Burgers is one of the most popular recipes on the blog.  As you may know, most store bought versions are not very healthy.  That’s why I make my own.  So much cheaper too!  These adzuki bean veggie burgers are my latest creation.

My younger daughter Olive loved these!  She is mostly tube fed and still learning how to eat by mouth so it was kind of a big deal to see her stuffing this into her mouth.  You can read more about her in the About Me section of the blog.  We liked these so much that I made a second batch yesterday.  Adzuki beans are mainly grown in East Asia.  They are tiny red beans, but don’t let the size fool you.  These little beans are packed with healthy nutrients.  They are high in iron, potassium and folic acid.  I got mine out of the bulk bins at Whole Foods.

Ingredients

Instructions

  1. Preheat oven to 400.
  2. In a saute pan , saute the onions and carrots in the oil on med/high heat for about 5-10 minutes.
  3. In a food processor , pulse the beans several times until they are half mashed.
  4. In a bowl , mix the quinoa, beans, onions, carrots, garlic, bbq sauce, egg and water until everything is incorporated.
  5. Add the salt to taste.
  6. Using your hands, form patties and place on a lined baking sheet.
  7. Bake for about 30 minutes.
  8. Remove and serve.

Recipe Notes

This recipe may seem like it has a lot of steps, but you can cook the beans and the quinoa ahead of time. You can also chop the onions and the carrots in the food processor ahead of time as well. That’s what I did. Enjoy!

Chickpea and Spinach Burgers

For those of you new here, my quest for a lot of different veggie burger recipes started after I wrote about Boca Burgers Exposed and also Morning Star Burgers Exposed.  These chickpea and spinach burgers are another delicious Pinterest find!  I found these on naturallyella.com.  Her blog has some pretty amazing looking food.  I suggest you go visit and take a look for yourselves. 🙂

Chickpea Burgers

My picture doesn’t look near as nice as hers, but I am still a newbie at the food photography thing.  I promise these are so yummy and really easy to make.  These would be great with a side of my Healthy French Fries.

Chickpea and Spinach Burgers

Chickpea and Spinach Burgers

Prep Time 30 min Cook Time 40 min

Ingredients

  • 1/2 cup chickpeas (drained, if using canned)
  • 1/4 cup onion, diced
  • 1 cup spinach, packed
  • 1 T olive oil
  • 1/2 T soy sauce
  • 1 T oregano
  • 1 T smoked paprika
  • 2 T sunflower seeds
  • 1 egg
  • 1/4 cup whole wheat pastry flour
  • 1/2 cup whole wheat panko bread crumbs
  • pinch salt

Instructions

  1. Combine chickpeas and onion in a food processor, pulse a few times to break up the chickpeas.
  2. Add in spinach, oil, soy sauce, oregano, paprika, and sunflower seeds, pulse a few more times.
  3. Add in egg, salt, flour, and bread crumbs, pulsing until mixture comes together and is well blended.
  4. Remove from food processor, run your hands under water, and shape patties.
  5. If grilling out, bake in an oven for 10 minutes in order to get a start on the burger. If pan frying, you can use right away.
  6. If pan frying, cook over medium-low heat for roughly 6-8 minutes on each side. The outside should be browned and crispy.
  7. I baked my patties in the oven at 350 for about 15-20 on each side. They were crispy on the outside and softer in the middle. They reminded me of falafel. I spread my White Bean Pesto on top of these and it was delicious!

Black Bean Veggie Burgers

Ever since I wrote the post about Boca Burgers Exposed, I have been making it a mission to create easy veggie burger recipes.  Like these black bean veggie burgers.  You can read about the Boca Burger post here.  This is a burger recipe we have been making for a long time, so I thought it was about time to get it up on the blog. These burgers provides a nice alternative that even older kids should be able to sink their jaws into.  These black bean veggie burgers would be great on whole grain bread, in a sprouted corn tortilla or served over quinoa.  The key to making this a tasty dish is the caramelized onions and the crispy outside.

This recipe makes a lot so you will be able to freeze some.  That is what we do.  These would go great with my Healthy French Fries.

Prep Time 20 min Cook Time 1 hr

Ingredients

Instructions

  1. Preheat oven to 400. 
  2. Dice or food process the onion. 
  3. Saute the onions in the walnut oil on medium heat until they are caramelized. 
  4. In a food processor , mix the beans, flax egg and milk until the beans are mostly smooth. 
  5. Put the bean mixture, the onions and the remaining ingredients in a bowl to combine.
  6. To finish, lightly oil a baking pan, grab a quarter cup of the mixture at a time, flatten in a nice round patty, and place on pan. 
  7. Continue until the mixture is gone. 
  8. Bake in oven for about 45 – 60 minutes turning over once about half way through.

Sweet Potato Veggie Burgers

I have been looking for homemade veggie burgers recipes.  These sweet potato veggie burgers are not my own recipe. However,  I make it a lot so I wanted to share it with you.  I found it on vegweb.  I made a few changes to the original recipe.

These sweet potato veggie burgers are easy to make, freeze well and a much better alternative to store bought versions.  I will typically make a double batch so I can freeze a bunch.  Then when you have a busy night with no time to cook dinner, you can whip these out, reheat and serve. Super easy.

They are sweet so kids will like them too.  I add avocado to the top of mine because avocados make everything better!  These would go great with my Healthy French Fries.

Sweet Potato Veggie Burgers

Sweet Potato Veggie Burgers

Ingredients

  • 1 sweet potato, peeled and chopped
  • 1-1 1/2 cups gluten free rolled oats (depending on the size of your sweet potato)
  • 2 green onions chopped fine
  • 1 T fresh parsley, chopped
  • 1 T nutritional yeast optional
  • salt and pepper to taste

Instructions

  1. Preheat oven to 350 degrees.
  2. Boil the sweet potato until tender.
  3. Mash the cooked sweet potato. 
  4. Add the oats and stir in the seasonings.  I used my kitchen aid mixer to stir it well. 
  5. Form the mixture into patties. 
  6. Line or grease a baking sheet with a bit of oil and put the patties on it.  I use a Mr Misto oil sprayer to grease the pan.  Works like PAM , but much healthier because you can fill it with whichever oil you choose.  No chemicals.
  7. Place in the oven for about 30 minutes, or until the burgers are a bit crispy on the outside.  Enjoy!
