Apple Cinnamon Bread (Vegan)

Apple Cinnamon Bread.  Today it is rainy and dreary out so I spent the morning in the kitchen.  When you have young kiddos like I do, you have no choice but to get up at the crack.  I love them, but man I wish they would sleep in once and a while.  So I set out to make some apple cinnamon bread.

I love apples and have made many dishes with them.  I have Apple Cinnamon Baked Oatmeal and also my Healthy Apple Cobbler.  I used store bought organic applesauce for this recipe, but it would be even better made with my Crock Pot Applesauce.  My house smells fantastic right now.  Who needs air freshener filled with chemicals when you can bake something that smells fabulous!

Prep Time 10 min Cook Time 17 min

Ingredients

Instructions

  1. Preheat oven to 350.
  2. Mix all the dry ingredients in one bowl.
  3. Mix wet in another.
  4. Add wet to dry.
  5. Spoon batter into mini loaf or muffin pans . I used mini loaf pans and ended up baking these for about 17 minutes.
  6. If you are doing muffins, you may want to check on them after about 12 minutes to see if your toothpick comes out dry.

    1. You can, but it may produce a bit denser of a product. If you have rolled oats, you can grind your own oat flour in a food processor. That's what I did.
      1. I was just about to ask that same question regarding using 100% white whole wheat flour and rolled oats. I'm going to try it today with the flour and grinding the oats. Thanks :)

    1. Thank you! I think if you mixed those I think it may be fine, but you might need to add an extra egg and a tad bit more milk? I'm not sure. There may be a binding issue since none of those flours contain gluten. Adding the extra egg may help.

  3. Hi! Really loving your site! This recipe sounds heavenly! My kids demanded banana bread ;) so I did a half cup apple sauce and 2 mashed ripe bananas and I want to bake in a loaf pan rather than the mini loaf, how long should they bake?
  4. I used unsweetened applesauce, the only kind I had in my pantry, and it seems very bland. Any suggestions on something you could add for sweetness? I wasn't sure what would affect the consistency.
  5. I made this to take to someone's house today and it turned out very dense. I used brown rice flour in place of the whole wheat. Do you have any suggestions of a different gluten free flour that I could use that will produce a lighter consistency?

  6. Hi! I was wondering if it should come out sweet? Because mine didnt...lol - should the applesauce have been sweetenend? And btw I am not from the US, so I googled what 1 cup would be and it said 240ml...still not sure, do you know if thats correct? Thanks!! :)
    1. I think 1 cup is 240ml. It is supposed to be mildly sweet. I used unsweetened applesauce. Sorry it was not sweet enough for you. :( Maybe next time you can add more sweetener? Maybe taste test the batter before you cook it?

  7. I am trying this using peaches that I mashed and added pure maple syrup to instead of the apple sauce. I love having fruit chunks in my bread. It is in the oven now and I hope it turns out.
