Banana White Chocolate Breakfast Cookies. Cookies for breakfast is always a good thing in my opinion. Do you agree? This breakfast cookie recipe only contains 5 simple ingredients. It’s a great way to use up those ripe bananas too.
These breakfast cookies are vegan and gluten free. They can also be made nut free by using sunflower butter instead of cashew butter.
The vegan bakery down the street from us makes their own white chocolate chips. That’s why I used in this recipe. You can also use regular chocolate chips if you like. Fruit instead of chips would be another good option.

Banana White Chocolate Breakfast Cookies
Banana White Chocolate Breakfast Cookies
Ingredients
- 2 cups gluten free rolled oats
- 1 cup cashew butter
- 2 T maple syrup
- 2 ripe bananas
- 1/3 cup vegan white chocolate chips
Instructions
Preheat oven to 350.
In a large bowl, mash the bananas. Then add in the cashew butter, maple syrup and rolled oats. Stir to combine.
Lastly, fold in the white chocolate chips.
Using a cookie scoop, drop cookies onto a lined baking sheet.
Bake for 12-14 minutes.
Let cookies cool before storing in an airtight container.
