Minestrone Soup (Slow Cooker Recipe)

Minestrone Soup.  I just love soups.  If you have been reading this blog for awhile now, then I am sure you have realized that.  This slow cooker soup is my latest recipe.

I also created a post recently including 6 Healthy and Filling Soups.  I will probably have to add this slow cooker minestrone to it.

This healthy and hearty soup is hearty and filling and it was perfect for the chilly day we had inTexas yesterday.  Soups are great because they are very budget friendly.  They also freeze well, so soups are great for batch cooking.

Minestrone Soup

Minestrone Soup

Prep Time 20 min Cook Time 6 hr

Ingredients

  • 4 cups vegetable stock
  • 1 28 oz can diced tomatoes or 3.5 cups homemade diced tomatoes
  • 4 stalks celery chopped
  • 4 carrots chopped
  • 1 onion chopped
  • 1.5 cups green beans chopped
  • 4 cloves garlic diced
  • 1 1/2 T fresh basil chopped
  • 1/2 tsp oregano (I used dried)
  • 2 cups pasta (I used quinoa pasta )

Instructions

  1. In a food processor , chop the carrots, onion and celery fine.
  2. Throw that mixture and all the other ingredients except the pasta in the crock pot
  3. Cook on high for the first hour, then turn to low and cook for a few more hours.
  4. Add the pasta in for the last 20 minutes of cooking and test a piece before you turn the crock pot off.

Slow Roasted Pear Crumble

This slow roasted pear crumble is simply amazing. I did not set out to make a pear crumble recipe at first. I am not even a huge fan of pears, but my husband and my daughter Meadow love them.  I do love a good fruit crumble recipe though. Since we ended up getting a bag of pears in our co op basket this past weekend, I decided to slow cook them in the crock pot to see how they would turn out. The smell in the house that day was amazing.  A Yankee Candle had nothing on these babies.  The pears came out so delicious in fact that even I had some.  I decided to boost them into even more awesomeness with the addition of a crumb topping.

It worked.  Marcus said they were the best part of his lunch this week.  This dish would be a perfect addition to your Thanksgiving meal.  I’m making it this holiday season for sure.

Prep Time 20 min Cook Time 4 hr

Ingredients

    For the pears

    Instructions

      For the pears

      1. Throw all the ingredients in the crock pot and cook on high for the first hour and then turn to back to low for at least 3-4 hours. This only gets better the longer you cook it.
      2. For the next step, you can place the pears in an 8X8 glass baking dish .
      3. Take some of the liquid from the crock pot and add it to the pears.

      For the crumb topping

      1. Preheat oven to 350.
      2. In a food processor , combine all the ingredients and pulse until the oats are sticking together.
      3. Sprinkle the mixture on top of the pears.
      4. Bake in the oven for about 30 minutes. Enjoy!

      Hearty White Bean Soup (Vegan, Gluten Free)

      I live in Texas and yesterday a cold front blew in making it a perfect time for a Hearty White Bean Soup.  We have been enjoying quite a mild fall season.

      The onset of this cold front prompted me to make this white bean soup in the slow cooker. It was very easy and warmed up me right up.

      I love crock pot meals because you can throw everything in and walk away.  This crock pot soup is no exception.  It will fill your house with some pretty mouth watering aromas!

      This is the perfect soup for a day spent in your pj’s relaxing and staying in from the cold outdoors.

      Hearty White Bean Soup

      Hearty White Bean Soup

      Prep Time 30 min Cook Time 8 hr

      This hearty white bean soup will warm you up on the coldest of days and leave you wanting more.

      Ingredients

      • 4 cups veggie stock
      • 4 cups white beans (We use about 1 1/2 cups dried beans that expands to 4 cups after soaking.)
      • 3 cloves garlic
      • 6 organic carrots
      • 6 celery stalks
      • 1 bay leaf
      • 1 medium yellow onion
      • 1 T olive oil
      • 1 T parsley
      • 1/2 tsp sage
      • 1/2 tsp thyme
      • salt to taste

      Instructions

      1. In a food processor , finely chop the onion, celery, carrots, and garlic.
      2. Put everything in a crock pot , turn on low, and let the contents slowly get warm.
      3. After they are warm (about an hour), you can turn on high and let slow cook for some time.

      The longer you can let it cook, the better. I would suggest waiting to salt the soup after everything has had a chance to cook. If you salt a soup too early, you run the risk of it being too salty as some of the liquid inevitably boils off. Enjoy!
