Salted Caramel Apple Cider Budino

Who here is a fan of rich, dense, custardy dessert? How about salted caramel? Yessss, and yessss! I thought so!
There is something about super creamy, egg-y desserts that is irresistible this time of year. I know this isn’t what comes to mind when you think of plant-based clean eating, but you can indulge in custard-esque treats without the dairy, sugar, or eggs! Case in point, this Salted Caramel Apple Cider Budino.

Have you ever had a chocolate turtle pie? It’s a decadent chocolate filling topped with caramel and pecans. One of my favorite combinations. Something about rich chocolate and pecans is so delightful and comforting this time of year when the weather gets cooler. I love to cozy up on the couch under my warm blanket and savor something chocolatey after the kids have gone to bed. Because #mommyneedschocolate 😉

Soft Baked Iced Gingerbread Cookies

Disclaimer: This post is sponsored by Pamela’s, but all opinions are my own.  Thank you for supporting the brands that I love.

If you love gingerbread cookies, you have to try these Soft-Baked Iced Gingerbread Cookies!  They are perfect for holidays and very easy to make.  I used Pamela’s grain and gluten-free nut flour blend.

One thing I really love about this nut flour blend is that there are no added ingredients.  Typically, gluten free flours often contain xanthan gum or guar gum.  Pamela’s has neither.  The only ingredients in this flour blend are: almond flour, coconut flour, pecan flour and walnut flour.

Kidney Bean Veggie Burgers

Disclaimer: This post has been sponsored by USA Pulses and Pulse Canada, but opinions are all my own.

I just love homemade veggie burgers, don’t you?  These Kidney Bean Veggie Burgers are packed with protein and fiber! You can eat them on a bun, or just serve the burger with a side of veggies.  I like to eat the burger without the bread.  I also spread a little Veganaise on top.  Smashed avocado may be good on top as well.

These burgers also freeze great, so you can double the batch and freeze some for quick meals.

Peanut Butter Cup Cookies

I love baking around the holidays. Peanut Butter Cup Cookies are one of my favorite holiday cookie recipes.  Before this Whole Food Life, I used to do a lot of traditional baking.  However since that time, I have tried to modify those traditional recipes to make them a bit healthier. I hope you enjoy my version.

This recipe is not only easy.  It’s vegan, gluten free and grain free!  I used Justin’s mini peanut butter cups to make mine, but you can also make this recipe with my Clean Eating Peanut Butter Cups recipe if you prefer.

Jamaican Jerk Roasted Sweet Potatoes

The other day, my husband was at the Whole Foods salad bar.  He saw they had some Jamaican Jerk Roasted Sweet Potatoes, but the were so expensive!  So he had to create his own version that is very affordable and easy to make!

We have had many recipes inspired from the Whole Foods salad bar.  A few examples are: Kale and Apple Salad, Curry Chickpea Cous Cous, and my Carrot Ginger Detox Salad.  These Jamaican Jerk Roasted Sweet Potatoes would be a great addition to your Thanksgiving table.

This healthy side dish has big and bold flavors.  It will not disappoint!  It also fits just about any diet.  Vegan, gluten free, paleo, grain free, dairy free, and nut free.

The great thing about this recipe is that you will have extra seasoning left over that you can use at another time.  It works well with any veggies or on your favorite protein.
