Smoky Sweet Potatoes and Avocado with Cauliflower Rice

I have been wanting to try out cauliflower rice for a long time.  For some reason, I thought it would be hard to make.  Boy was I wrong!  Making cauliflower rice is super easy. I first learned how to make it from Tasty Yummies.  She has a step by step tutorial.  This smoky sweet potatoes and avocado with rice is delicious and very filling for a grain free dish!  I have been venturing into grain free meals lately.  I already have a zucchini pasta with avocado pesto and a spaghetti squash with pesto on the blog.  I will be making this recipe again in the near future!

I cooked the rice and the sweet potatoes the day before.  So the following day I only had to quickly throw them together.  Cauliflower rice has the same mouth feel as rice.  I was really surprised how good it was!  You have to try it.

Sweet Potato Black Bean Burgers

I love veggie burgers.  Who doesn’t right?  Well store bought veggie burgers don’t cut it for me.  The rubbery texture and unidentifiable ingredients in store bought veggie burgers are enough to turn me off.  You can get so much more flavor and texture from homemade veggie burgers.  These sweet potato black bean burgers are a spin off my Sweet Potato Veggie Burgers.  If you have made those burgers, you will love these too!

Smoky Sweet Potato Fries (Vegan & Gluten Free)

These Smoky Sweet Potato Fries are awesome.  I used to think that french fries were off limits once I started eating better, but it turns out that’s not the case.

I already have a Healthy French Fry recipe on the blog.  I love sweet potatoes and I really wanted to make some french fries with them.  Well today I made these sweet potato french fries, and they were amazing!

This sweet potato french fry recipe is really simple to make.  The smoky flavor of the chili powder and the smoked paprika really goes well with the sweetness of the sweet potatoes.  This recipe would go great with my veggie burgers.

I loved dipping them into my Homemade Ketchup.  Needless to say, the entire tray was gone in minutes.  My picky, older daughter loved them!  This made me very happy because she says she doesn’t like sweet potatoes.

Smoky Sweet Potato Fries

Smoky Sweet Potato Fries

Prep Time 15 min Cook Time 1 hr Serves 4 servings     adjust servings

Ingredients

  • 1 sweet potato chopped into fries (I used this machine )
  • 1 heaping tsp smoked paprika
  • 1-2 T coconut oil
  • 1 tsp chili powder
  • salt to taste
  • 1/2 tsp cayenne (optional)

Instructions

  1. Preheat oven to 375.
  2. In a saute pan , pan sear the fries with the oil and spices for about 5-7 minutes, stirring often.
  3. Once all the fries are well coated with seasoning and oil, spread them out on a lined baking sheet .
  4. Bake for 1 hour, stopping halfway to flip and shake them around.
