Jamaican Jerk Roasted Sweet Potatoes

The other day, my husband was at the Whole Foods salad bar.  He saw they had some Jamaican Jerk Roasted Sweet Potatoes, but the were so expensive!  So he had to create his own version that is very affordable and easy to make!

We have had many recipes inspired from the Whole Foods salad bar.  A few examples are: Kale and Apple Salad, Curry Chickpea Cous Cous, and my Carrot Ginger Detox Salad.  These Jamaican Jerk Roasted Sweet Potatoes would be a great addition to your Thanksgiving table.

This healthy side dish has big and bold flavors.  It will not disappoint!  It also fits just about any diet.  Vegan, gluten free, paleo, grain free, dairy free, and nut free.

The great thing about this recipe is that you will have extra seasoning left over that you can use at another time.  It works well with any veggies or on your favorite protein.

Chunky Vegetable Soup

Fall is coming and I am going to start posting more soup recipes.  Starting with this Chunky Vegetable Soup.  I made this in the slow cooker and it couldn’t have been easier!

I used the slow cooker instead of the pressure cooker because this makes a big batch.  I didn’t think I could fit the whole thing in my pressure cooker.

I love using the slow cooker because the soup can cook even while you are not home.  In fact, when we made this, we left the house for most of the day and came home to a delicious smell.  It was making my mouth water.

As it’s written, this healthy soup recipe is vegan, gluten free, paleo and oil free.  If you wanted to make it more hearty, I think adding kidney beans or brown lentils may be nice additions.

Sweet Potato Chickpea Stir Fry (Vegan)

I am super excited to share this Sweet Potato Chickpea Stir Fry recipe since it contains many of my favorite foods! I could seriously live on sweet potatoes and chickpeas.

This recipe is great for so many reasons.  It makes A LOT of food, so it’s great if you batch cook and freeze some meals.  It’s also very inexpensive to make.

This sweet potato chickpea stir fry is vegan and gluten free.  It’s also very versatile.  I think you can add other veggies in here as well.  I think red bell peppers or kale would be nice additions.

I like to make large batch recipes like this and then freeze in serving sized portions. Then I can just grab and thaw exactly what I need, instead of thawing out this gigantic container and only using a little.

Coconut Curry Cauliflower

I love my veggies, but cauliflower has always been one that I avoided.  That is, until I made this Coconut Curry Cauliflower!  Coconut and curry were made for each other and the flavors go so well in this easy side dish.  If you wanted to make this a complete meal, you could serve it over rice or quinoa.  I also think the additions of some greens, like spinach, would be delicious.  I used the full fat canned coconut cream to make this dish extra rich in flavor and texture.
