Okay, I'll be honest - I've had a busy summer and haven't done much in the way of trying your recipes yet, but I will tell you...... your cookbook is So inspiring. It actually brings a smile to my face each time I sit down and look at it, and makes me feel good to know I can easily make these delicious, healthy recipes!     1. Thank you!! There is a version in Portuguese available in Brazil, but not Spanish yet. I will recommend it to my publisher though. :)
  4. I tried the Lentil Shepherd's Pie with cauliflower mash tonight. It tasted fine, but the liquids never did absorb, and I'm sure I followed the recipe to a tee. Any thoughts on why this happened? It ended up being more like soup and we ate it from a bowl! Looking forward to trying more recipes from the book. Next up is the veggie stir-fry!

  6. I just bought the real book my husband's not so good with a phone it's easier for him to look at a picture in a book and tell me I want that so here we go
    1. I am not familiar with Bob Evan's menu, but I would stick to lean proteins and lots of veggies. No charge for this site. The recipes are free. :)
    1. Not all of them are oil free, but some are. Those that are not oil free can most likely be adapted to be oil free.
  7. I picked up your Easy. Whole. Vegan cookbook at Costco a few weeks ago just because I had to support anyone who would write a book with that title. Tonight I finally opened it and Wow! I love your story and read the book cover to cover. That your initial photo was of roasted beets made me smile. I am so glad this isn't a book of meat substitute recipes with a ton of obscure ingredients! Even though I have been preparing meals this way for a while, I learned a lot in the process. I love all the photos and will get cooking right away.
