Amazing 3 Bean Sweet Potato Chili (Vegan)

This Sweet Potato Chili recipe is fantastic!  I cannot take credit though.  My husband Marcus created it.  He is the chili guy in the family.  Actually, up until recently, he was the cook too!

I have learned a great deal from him. 🙂  Also, I should mention, this sweet potato chili is super easy to make.  You just throw everything in a pot and cook.

It would probably be extra good slow cooked in the crock pot.

We brought this healthy chili to a family member’s house on Thanksgiving.  Everyone that tried it, loved it.   This recipe also makes a large amount so you can freeze some for those busy days.  I freeze it in serving sized containers.

Amazing 3 Bean Sweet Potato Chili

Amazing 3 Bean Sweet Potato Chili

Prep Time 20 min Cook Time 3 hr


Ingredients

  • 3 cups veggie stock
  • 2 cups black beans
  • 2 cups kidney beans
  • 2 cups pinto beans
  • 1 28 oz can organic diced tomatoes or about 7 cups diced tomatoes
  • 1 onion diced
  • 1 cup corn (please try to buy this organic)
  • 2 sweet potatoes diced
  • 4 med-lg garlic cloves minced
  • 1 T chili powder
  • 3/4 T cumin
  • 1 tsp smoked paprika
  • 2 T oil (we used grapeseed oil)

Instructions

  • We use dried beans and just soak them overnight. Boil them for about 10 minutes in the morning. Makes for a much cleaner taste.
  • Take all the ingredients and throw them in a large pot.
  • Cook on high for about 3 hours covered stirring every once in a while.
  • For the last 1/2 hour cook uncovered and you can also add about a T of flour to thicken the sauce if needed. We used brown rice flour.

This makes a ton of chili. If you don’t eat it all, it should freeze nicely and then you will have a backup meal for a day when you don’t feel like cooking. This came out so well that we are probably going to make this for our family thanksgiving meal. After all, we are the weird vegans of the family.

  1. Great recipe! Do you buy bulk organic dried beans, or conventional? I know that some fruits and veggies hold more/less pesticides than others, which helps to be able to buy some conventions produce when on a budget. But I can't find any good info on beans. Do you know? Thanks!
    1. Thanks! I buy dried organic beans from the bulk bins at Whole Foods. If it's not in your budget to buy organic beans, I think it would be okay to buy conventional. I haven't heard about the pesticide use on beans. I like to buy from the bulk bins because you can only buy what you need to use for a recipe. :) We are actually making this chili today!
  2. I am definitely going to try this soon. However, I really dislike kidney beans and was wondering if there was another bean I could use in its place. I suppose I can make up the difference by adding more of the other 2, but thought I'd ask in case you had a suggestion. And thank you for all your hard work. My daughter and I have been gobbling up our overnight oats (or as my daughter calls them "over oats") in the morning thanks to your recipes. :)
  3. It's that time for me to use my crock pot so I am looking forward to making this recipe for the first time, it sounds delicious! I usually make a cornbread with my chili, but I don't have a "clean" recipe for one. Perhaps you can experiment making up one Melissa ? I was thinking of putting green chilies in the cornbread batter (I like it a bit spicy) or bell peppers for some color and contrast, just an idea. I'm sure you'll think of something.       1. Just made this recipe in my slow cooker overnight. We had the opportunity to get some Japanesse sweet potato, which was more of a yellow than orange color, and I added some a tsp of pink Himalayan sea salt and a pinch of cayenne pepper for an extra kick. It was very easy to make and delicious! Hubby asked if I can add some meat or bacon next time, but he gobbled it all up none the less (with his white rice). Will definitely be making this again.
  4. We have been taking small steps the past few years into healthy eating and we are ready to move a little faster. I have heard bad things about corn so I was just wondering what kind of corn I should put in this yummy recipe? Thanks
    1. I bought 48 ears on non GMO organic corn over the summer and froze it. I would suggest getting fresh organic corn if you can find it. If not, you can buy organic frozen corn. If you still can't find that, you can probably omit it from the recipe if you like.
  5. Trying to figure out which size crockpot to use - how many does this serve? I have a bigger (6qt) and smaller (3qt?) crockpot.
  6. I made this last week over half-term (school vacation) in order to have a yummy filling meal in the fridge for the kids for a few days. Both girls loved it (5 and 1.5)! Their bowls were being turned upside down and licked! My plan on having left overs for the week quickly went out the window once my husband got a taste. Other than the three moderate bowls the girls and I had, he ate the entire lot over two days. This great recipe is now in our regular rotation. Such a time saver to have a delicious meal that I can pop in the slow cooker. Thanks!!!
    1. Sure can! Just cook on high for the first hour and then turn down to low for however long you want to cook it for. Maybe 2-3 hours?
  7. Made this tonight for my carnivore family, and we all thought it was delicious. I was nervous that it would be sweet but you can hardly taste the sweet potato. Really a recipe I will make again soon. Thank you.
  8. Made it today for the big snowstorm we just got! Loved it!! Used regular paprika and felt it could use a little kick. Was thinking next time I would use fire roasted diced tomatoes and more corn. Absolutely delicious!!
