Pumpkin Pie Overnight Oats.  My mind is buzzing with all kinds of new pumpkin recipes!  Naturally, I had to do one with overnight oats.

My favorite breakfast lately is overnight oats. So easy.  Even my daughter can make these.  You can make up 5 at a time for healthy breakfasts all week long.  No cooking even required!

It’s a great recipe to try with your little ones.  If you like a smooth oatmeal, use rolled oats.  If you like a crunch to your oatmeal, use steel cut oats.

  1. Pour all the ingredients into a jar and mix very well.  I make 5 at a time and they last all week!  Great for those busy mornings.  I think these would also be awesome with some chopped pecans too.  Enjoy!

  1. Love your website! I just made this last night, sat in the fridge from 10p-6a, and the liquid is mostly not absorbed. I used bobs red mill steel cut oats and almond milk. Did I do something wrong? I'm going to leave it for another day and keep my fingers crossed!
    1. Did you add the flax meal and chia seeds as well? The liquid should have absorbed it all. :( I'm sorry that happened.
        1. The chia seeds absorb a lot of the moisture. That was probably the problem. You could add a few extra oats instead and it should be okay in the morning. Maybe 1 or 2 tablespoons?
  2. Just made a batch of this for the first time. Followed recipe exactly (minus syrup) and added in pecans as suggested. Substituted Stevia for the maple syrup as was suggested in the Bannana Nut recipe. Everything smelled great but when I went to taste ... bleh!! You could realllllly taste the bitterness of the Stevia :(. I'm going to trash everything and make again with the maple syrup. Thanks for the recipe and warming to those wanting to sub Stevia...don't!
    1. Sorry you didn't like it with stevia. It can be a hard sweetener to get used to. Personally, I don't care for stevia in most recipes, but I can handle it in the overnight oats. I'm sorry you had to throw the whole thing out! :( Let me know how you like it with the maple syrup.
  3. I was really excited to try overnight oats for the first time, but I think I prefer my oats actually cooked. Next time, I'll try these ingredients in my cooked oatmeal w/a bit less spices - it was overpowering!
  4. I have been reading that chia seeds should be soaked before consuming, because they absorb so much fluid. Does that affect how much liquid the oats can absorb?
  5. Hi, I'm new to overnight oats but think these sound fabulous! Being that I've never made them before I don't know what to do after mixing them all together. Do I pop the jar in the fridge? If so, then how do you heat it up in the morning? Thanks for helping a newbie! PS, you're daughter is adorable! ~Lindsay
    1. Hi Lindsay! Just mix them up, stir well and place in the fridge overnight. In the morning, you can either eat them hot or cold. Whatever your preference. :) You can warm them quick in the microwave, or on the stove.
  6. I made this last night... It did not work for me. I might've used too much of one of the spices. I would recommend 1/8 tsp on all the spices. Also I used unsweetened almond milk and 2 dates and it was not nearly sweet enough. I had to add a bit of splenda to make it edible. It just tasted like raw spices. :-( I would use sweetened almond milk and less spices next time.
    1. I am sorry it wasn't sweet enough for you. I try and keep the sugar low on my recipes, but this is plenty sweet for me.
