Banana Nut Overnight OatsOvernight oats are very popular these days.  I have been having overnight oats for breakfast every morning lately.

They are so easy and travel well too.  My husband takes them to work with him.  Readers keep asking me to create new flavors, so here are some healthy and vegan banana overnight oats to try.

I’ve been making my overnight oats with stevia lately.  I don’t notice the after taste in this recipe at all.  I love the fact that there is no sugar added.

If you do not want to used stevia, I will put other options in this recipe as well.

Instructions

  1. Throw all the ingredients except for the banana in a jar and mix well. 
  2. Store overnight in the fridge. 
  3. When you are ready to eat, slice the banana and mix it in.

I thought putting the banana in the night before would make it too mushy. I make 5 of these at a time and store them in the fridge for easy breakfasts all week. Enjoy!

    1. Everything is uncooked. You can quickly heat it in the morning if you like. If you use rolled oats, it will be plenty soft in the morning. Steel cut will retain a slight crunch. I like using steel cut oats myself.
  3. I made this recipe tonight for tomorrows breakfast. I hope my little guy likes it! i didnt have any flax meal so i omitted it...hopefully my little guy will like them!
    1. I have these almost every morning, they are all delicious and you will love them for the taste and how quick they are to make. Love having breakfast waiting for me when I get up. They are so good, I just love them all!!
  4. I was just looking in my pantry and remembered that I have a box of quinoa flakes. Do you think I could use this in place of maybe half of the called for amount of oats in the over night oats recipes?
      1. In the banana nut overnight oats, I subbed 1/4c quinoa flakes for a 1/4c of the oats. I also used pecans and almond milk. It came out great!! the quinoa flavor really went well with the other nut flavors in this recipe. I will be using the quinoa flakes again :)
  5. I have overnight oats almost every morning! Usually it is these banana ones, but this morning I am eating the almond butter chocolate! It is so good, too. It is hard to pick a favorite, so I just switch around and they are so good and filling. Just love these recipes!!!! Thank you for all the work you do to bring these to us.
  6. I had this for breakfast this morning and it was great! This is the first time I've tried the overnight oats and now I may be hooked:) I'm 8 mos. pregnant and they kept me full all morning! I usually eat a bowl of cold cereal for breakfast and am hungry an hour later. I forgot to add the bananas, but the oats were still really good!
    1. I'm so glad you enjoyed them! I eat the Chocolate Almond Butter oats almost every morning, but the banana is my husband's favorite.
  7. I am such a big fan of your overnight oats!!! I absolutely love them and have one almost every morning! On mornings I don't have one, I miss it and get hungry sooner than usual! They are filling and taste so, so good! My husband says I must be the biggest fan of yours he has ever seen. I made three yesterday late, one almond butter chocolate and two pumpkin pie.     1. I am not sure the ml, but I use the 12 oz jars. I get them in a 4 pack from Target. They are just perfect for this recipe.

I was very excited to see the ground vanilla in this recipe...I bought some in Tahiti on my honeymoon last spring and haven't used it in anything yet.   11. I smash the banana as I would for banana bread and add it in the night before. I leave out the spices and let the fruit shine through. It is so very good! I keep thinking I'll try other flavors, but the banana is so good that it's really the only one I want, though I make other flavors for the rest of the family. We prefer our oats warm, but to keep this a raw recipe, we just place the jar in a container of hot water. It warms it just a bit. Thanks for the recipes.
