Gingerbread Overnight Oats

Overnight oats are some of the most popular recipes on my blog.  I can totally understand why.  They are so easy to make, healthy and filling, and there is no cooking required!  I’m sold.  Probably why I eat them everyday.  With the holidays approaching, I knew I had to come up with a recipe for gingerbread overnight oats flavor.

These gingerbread overnight oats can be made 5 at a time so you have quick grab and go breakfasts throughout the week.  I know there are cranberries in the photo, but not in the recipe. I did that for color, but feel free to add them in if you like.

    1. Not sure. I have never thought of that. I suppose they could be blended, but they might be thicker than a smoothie. More like a pudding.
  1. Another wonderful flavor to add to my recipe collection. I have enjoyed several of your overnight oats recipes, and your recipes inspire me to where I came up with a flavor combination of my own (pears, coconut & cinnamon). :-)
  2. Hello, Do you think it would be possible to have a french translation. We love your healthy foods but it's difficult for us to translate some words. Thank you so much for your help. We look forward to hearing from you. Best regards from the Loire Valley in France
Enjoy! :)

  3. I just made some of your overnight oats and have them in the fridge for this week! My jars are small so I had to reduce the amount of everything and still I'm up to the rim. Will they expand overnight? Just wondering if I need to pour out some of the milk so I don't wake up to a mess. Thanks :)
    1. Yes it will expand overnight. I hope your jars hold up okay! Just for the record, you can really use anything to store them in. I use the jars because I always have them on hand.
  4. Yet again, yummyness is waiting! Thanks for all the beautiful recipes. I'm yet to find one that i don't enjoy. But, I'm also still learning my way around the whole clean eating and stuff. I never used or tasted molasses before. So my question is whether the molasses is for sweetening only or if it brings some special taste twist with it. And what else would you use it for? Just wondering whether to leave it out or go and make another purchase. Just curious ;)
    1. Molasses is actually a good sweetener. I don't use it much in baking because it is kind of bitter, but it is a main ingredient in most gingerbread recipes and that is why I added it. Blackstrap molasses (the kind I used) is actually a great source of iron as well. :)
  5. HUGE fan of your recipes and website! I was wondering if you have a cook book? Gave your site a shout out on my blog, i hope thats alright:) www.zanderscorner.com Xx Leah
    1. Thank you! I use the 12oz mason jars. I get them at Target and they come in a 4 pack. They are the perfect size. Any jar will do though. I have also used old pickle and sauce jars.
  6. Wondering if I can leave the maple syrup out and add it in the morning? I am a type two diabetic I love the taste of maple syrup but, eek it tends to spike my blood sugars if I have to much! LOL I love your site! :)
