Vegan Carrot Cake (Gluten Free)

Vegan Carrot Cake is today’s healthy recipe.  I am going to let you in on a secret.  I am probably the only person in the world who doesn’t like carrot cake.

My husband on the other hand, LOVES it.  In fact, he cannot go to Whole Foods without getting their carrot cake slice from the bakery.

He loves the whole foods cake, but the icing is too sugary for him.  So I tried to make a healthier version for him.  That is how this vegan carrot cake was born.

I used no oil at all in this vegan carrot cake recipe.   You don’t have to be vegan or gluten free to enjoy this healthier carrot cake recipe.  If you like this then you may also like my carrot cake baked oatmeal or my carrot cake homemade larabars.

 

Vegan Carrot Cake

 

You are probably wondering why there are no raisins in my carrot cake.  Well I gotta be honest.  Sometimes I make mistakes.  I actually wrote the recipe to include raisins.  I just forgot to fold them in the batter before I moved it to the pan.

I also only made 1 pan instead of doing a layered cake because I wasn’t sure how the recipe would turn out.

If you want to make a bigger cake with layers, feel free to make 2 batches of this recipe and put them together.   I used my 5 minute frosting recipe to frost this, but you can use a cream cheese frosting if you like too.

Carrot Raisin Muffins (Vegan and Gluten Free)

Carrot Raisin Muffins.  Ever since I made my carrot cake baked oatmeal, I have been wanting to make carrot raisin muffins.

My husband is a fan of carrot anything, so I knew these carrot raisin muffins would be a hit.  I must be honest though.

This was my second attempt at carrot muffins.  The first batch of these healthy muffins came out awful.

With a few tweaks, I was able to make this batch successful!  If you like carrot treats, you may also like my carrot cake larabar bites.  Anytime I can sneak some veggies into my kids is a win.  They enjoyed these muffins.

These muffins are vegan, gluten free dairy free and egg free.  Great for anyone that has allergies.  My own daughter struggled with dairy and egg allergies for the first 2 years of her life.

Normally I use oat flour in all my muffin recipes.  I happen to have a bag of gluten free all purpose, so I used that instead.

Carrot Cake Baked Oatmeal

Do you like carrot cake?  You can have it for breakfast with this Carrot Cake Baked Oatmeal.  If you have been following me for a while, you know I love my oats and oatmeal.  Baked oatmeal is a great way to take your oats on the go.  Baked oatmeal is like oats in muffin form.

This healthy baked oatmeal is my latest creation.  If you like this, you may also like my strawberry banana baked oatmeal or my almond butter chocolate baked oatmeal.

Another thing that makes baked oatmeal so great is that it can be made ahead of time.  I usually make a double batch and stick one batch in the freezer.  That way, if I am feeling lazy one morning, I have a healthy breakfast option to pull out of the freezer. Just reheat and you are good to go!

I must admit, I am not a fan of carrot cake anything.  My husband is a huge fan of anything carrot cake, so he tasted tested these and gave his approval!  It took me two tries to get this recipe perfect.  I hope you enjoy it.

Carrot Cake Larabar Bites (Vegan)

Carrot Cake Larabar Bites.  I know that you all love larabars.  I have had several requests for the carrot cake bar recipe, so I thought I would create you these carrot cake larabar bites.

The flavor of these carrot cake larabar bites of reminded me of my Coconut Cream Larabars and also my No Bake Pumpkin Pie Cookies.

I checked the ingredient list on Larabar’s website and created my recipe based on those ingredients.   I am hoping it tastes similar to the store bought version.

I am not a huge carrot cake fan, but my husband is.  My baby daughter LOVED this recipe.  That was a surprise to me.  Very kid friendly. 🙂  They are also vegan, gluten free and grain free.

Carrot Cake Larabar Bites

Prep Time 10 min Serves 12 balls     adjust servings

Ingredients

Instructions

  1. In the food processor , mix the carrots, walnuts and almonds and coconut.
  2. Then add in the cinnamon, salt, dates, pineapple and coconut oil. If the mixture seems slightly dry, add in a bit of water. I didn’t have to add any in mine.
  3. Once a dough forms, roll into balls and place in the fridge to firm up.
