Coconut Pecan Cookies

New cookie recipe for you today.  Originally, I set out to make cowboy cookies.  Then after I had them in the oven, I realized I forgot to add the chocolate chips and oats.  Oops!  Even without those 2 things, these coconut pecan cookies still came out very yummy.  They almost reminded me of the flavors in pecan sandies.  In any case, these flourless cookies were delicious.

How about you?  Especially when we are talking about healthy pumpkin recipes.  These Iced Pumpkin Cookies are made healthier.  You would never guess by the taste.  These remind of those sinful soft batch cookies from the grocery store. You know the kind I am talking about, right?  Back in the day, I could inhale a lot of those!!  This is my healthier, pumpkin version of those cookies.   I hope you enjoy them as well.

I used freeze dried strawberries in this recipe.  However, I think you can also use fresh strawberries if you add a little extra cashew butter to balance out the liquids.  These healthy cookies are vegan, gluten free and paleo approved.  They are super easy to make.  Our batch didn’t last the day.  This recipe makes a small batch, so if you are feeding a lot of people, you may want to double the recipe.
