Chickpea Fajita Bowls (Vegan, Gluten Free)

Chickpea Fajita Bowls.  I know it’s been awhile since I posted a savory recipe.  So today I am bringing you this healthy fajita bowl recipe.  It’s naturally vegan and gluten free.  Super simple and you can really add any veggies you like.

I love this dinner idea because any veggies will work.  So you can use up leftovers in the fridge.  I served mine over cooked quinoa, but you can eat it plain too.  Serving over brown rice is another option if you want to stretch the meal out more.

If you like a little more heat, you can add a jalapeno at the same time you add the bell peppers.

Chickpea Fajita Bowls

Chickpea Fajita Bowls (Vegan, Gluten Free)

Prep Time 10 min Cook Time 15 min Serves 4 servings     adjust servings

Super easy Chickpea Fajita Bowls. Vegan and gluten free!

Ingredients

  • 2 cups cooked chickpeas
  • 1 yellow onion, diced
  • 3 cloves of garlic, minced
  • 1/2 red bell pepper, thinly sliced
  • 1/2 yellow bell pepper, thinly sliced
  • 1/2 green bell pepper, thinly sliced
  • 8-10 baby bella mushrooms, thinly sliced
  • 1 T homemade fajita seasoning
  • 1/2 T avocado oil
  • sea salt to taste
  • Juice of 1 lime

Instructions

  1. In a large saute pan , on medium heat add the oil, onions and garlic. Cover and cook for 3 minutes.
  2. Then add in the peppers and mushrooms and cook for another 5 minutes.
  3. Lastly, add in the fajita seasoning, chickpeas and sea salt. Cook for another 2-3 minutes.
  4. When ready to serve, squeeze the lime juice over the top. You can serve over quinoa or brown rice.

We topped ours with avocado. This should keep for 5 days in the fridge. Enjoy!

Easy Broccoli Stir Fry

If you are looking a quick meal idea, this Easy Broccoli Stir Fry is it.  I was inspired to make this recipe by my Thai Peanut Sauce recipe.  I thought it would go really well with the broccoli since I sometimes put broccoli in my Peanut Noodle Stir Fry recipe.

I slightly tweaked the peanut sauce for this recipe.  It came out pretty yummy!

I added peanuts for some crunch and extra protein.  If you wanted, you can stretch this meal by serving it over rice or quinoa.  As is, this Broccoli stir fry is vegan and gluten free.

Sweet Potato Chickpea Stir Fry (Vegan)

I am super excited to share this Sweet Potato Chickpea Stir Fry recipe since it contains many of my favorite foods! I could seriously live on sweet potatoes and chickpeas.

This recipe is great for so many reasons.  It makes A LOT of food, so it’s great if you batch cook and freeze some meals.  It’s also very inexpensive to make.

This sweet potato chickpea stir fry is vegan and gluten free.  It’s also very versatile.  I think you can add other veggies in here as well.  I think red bell peppers or kale would be nice additions.

I like to make large batch recipes like this and then freeze in serving sized portions. Then I can just grab and thaw exactly what I need, instead of thawing out this gigantic container and only using a little.

Super Easy Black Eyed Peas

Okay, so I know I am late with the black eyed pea dish, but better late than never.  Here are some Super Easy Black Eyed Peas for you.  I know traditionally black eyed peas are eaten on New Years Day for good luck.  In fact, we did eat this dish on New Years Day.  I just never anticipated it would be good enough to blog about.  It was awesome.
