Easy Tomato Summer Salad (Vegan, Paleo)

I am a huge salad freak.  I love all kinds if you haven’t guessed by now.  I really enjoy the simplicity of this easy tomato summer salad.  You can make it with just a few ingredients.

You may already have them all in your pantry.  This tomato summer would be great for any summer party.  It fits any diet since it’s vegan, gluten free and paleo.

This Brussels Sprouts Salad with Almonds and Dates may be my most favorite salad ever.  I know I said that about my quinoa salad with avocado and tomatoes, but this is just as good!  You all know I love Brussels sprouts recipes.  Especially my maple glazed Brussels sprouts.   You have got to try this one!

I love the flavors in this.  The dates help balance out the acidity of the dressing.  This salad is very easy to prepare and should last several days.  However, I would only add the avocado right before you are going to eat it.  Otherwise, it will get too mushy and brown.  I hope you enjoy this as much as I did!

Easy Cabbage Salad (Vegan, Gluten Free)

I made you another salad.  This time it’s an Easy Cabbage Salad. I know we are headed into November soon, but it’s still warm here in Texas.  It was actually 90 yesterday!  So salads it is.

This Easy Cabbage Salad is vegan, gluten free and can be made paleo if you omit the edamame.  The tahini dressing is so good!  It would also make a great dip for veggies!  It would also make a great dip for my spring rolls.

Corn Tomato Avocado Salad (Vegan, Gluten Free)

I think I have mentioned that I am a big fan of salads. This Corn Tomato Avocado Salad is my latest.  I have so many healthy salad recipes on the blog already.

You can never have too many salad recipes right?  The corn we used in this recipe was organic and non GMO.  We bought 48 ears of it from our co-op last summer.

We still had some left in the freezer.   This corn, tomato and avocado salad could be eaten on it’s own, but it also makes a great side dish too.

If you are worried about the avocado browning in the fridge, you can always squeeze a little extra lime juice on it.  Or you can add the avocado right before you eat it.  That is what we did.
