Dairy Free Potato Salad

Now that Spring is finally here, it’s time to think about outdoor parties and BBQs.  We have a pool so I am sure we are going to do some entertaining.  It’s my favorite time of year.  I have been trying to think of some good BBQ dishes.  First thing I came up with was the Pineapple Mango Salsa.  Now I am giving you potato salad.

This potato salad is dairy free as well as vegan.  I know there are lots of kids these days with dairy allergies, mine included.  This recipe is for them.  It is pretty darn tasty too.  For the mayo base, I used my Dairy Free Ranch Dressing.

Prep Time 10 min Cook Time 15 min

Ingredients

  • 2 red potatoes cubed
  • 2 golden russet potatoes cubed
  • 1/2 cup zucchini chopped
  • 1 large carrot diced
  • 3 green onions chopped
  • 1 celery stock chopped
  • 1 cup dairy free ranch dressing
  • 1 T dijon mustard
  • salt and pepper to taste

Instructions

  1. In a pan, boil the potatoes to soften them.  About 10-15 minutes. 
  2. Drain and let cool. 
  3. Mix all the ingredients in one bowl. Makes about 3-4 servings. Enjoy!

BBQ Cauliflower Bites

I have told you before about my love of Cauliflower Popcorn.  Well this dish combines my love of the popcorn with my husband’s Homemade BBQ Sauce.  These may be even more addicting!  Who doesn’t like BBQ sauce, right?  This is a great way to get your kids to eat their veggies.

I’m not going to lie, the entire tray was gone in about 5 minutes!  My 3 year old loved them!  Plus, they are super easy to make.

Ingredients

Instructions

  1. Preheat oven to 400.
  2. Cut the cauliflower into florets. I save the scraps in the freezer so I can make my Homemade Vegetable Stock .
  3. Place cauliflower onto a lined baking sheet.
  4. Brush on BBQ sauce until the cauliflower are all covered.
  5. Place in the oven a bake for about 45 minutes, checking every 5-10 minutes or so to shake in order to prevent burning.

You may also want to brush more BBQ sauce on. That’s it. This didn’t last long in our house. My husband pretty much inhaled them!

Healthy Candied Yams

Thanksgiving it a time when we tend to blow our diets.  So I am trying to find healthy alternatives to those holiday staples.  Recently, I posted a recipe for my vegan green bean casserole.  Here now is my healthy candied yams. These healthy candied yams got the thumbs up from my non vegan in laws.  I hope you like it too.

Before starting this recipe, I thought that sweet potatoes and yams were pretty much the same.  After doing some research, I found they are actually quite different.  Yams are much sweeter with a darker flesh than sweet potatoes.  That is probably why they work so well in this dish

I made this recipe with only one yam because I wasn’t sure how it would taste.  Feel free to double this.

Prep Time 15 min Cook Time 30 min

Ingredients

  • 1 yam cubed
  • 1/4 cup orange juice
  • 2 T maple syrup
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg

Instructions

  1. Preheat oven to 400. 
  2. Slice the yam into 1 inch cubes. 
  3. Throw them in a pot of boiling water for about 5-7 minutes until they are slightly underdone.
  4. Transfer then yams to a greased baking pan. (For this recipe I used an 8X8 glass dish) 
  5. In a measuring cup, mix the orange juice, 1T maple syrup, cinnamon and nutmeg. 
  6. Pour the mixture over the yams. 
  7. Bake in the oven for about 25 minutes. 
  8. For the last 2 minutes of cooking, pull the dish out and brush with the last T of maple syrup.  Enjoy!
