Okay, so I know I am late with the black eyed pea dish, but better late than never.  Here are some Super Easy Black Eyed Peas for you.  I know traditionally black eyed peas are eaten on New Years Day for good luck.  In fact, we did eat this dish on New Years Day.  I just never anticipated it would be good enough to blog about.  It was awesome.

In fact, we may eat this next New Years Day as well.  You should too.  It’s yummy!  This is another one of my husband’s creations.  He also has come up with Acorn Stuffed Squash with Wild Rice and Peanut Noodle Stir Fry.

Gluten Free Homemade Nutter Butters.  Have I ever told you what a big fan my husband is of peanut butter?  He just loves the stuff.  Me?

I’m more of an almond butter girl.  Anyway, he used to love nutter butters.  Who didn’t love nutter butters?

The nutter butter is loaded with peanut flavor and also a lot of unwanted ingredients.  If you have never had a nutter butter, it’s two peanut butter cookies with a peanut butter frosting in between.

I thought I would surprise him with a homemade nutter butter that was vegan and gluten free!

Chard Wraps with Apple Slaw (Vegan)

Chard Wraps with Apple Slaw.  The other day my husband bought a bag of apples because they were on sale.  It was perfect because I have been wanting to do an apple slaw.

I normally make a crock pot applesauce.  What better way to enjoy the apple slaw than a in a chard wrap?  These lettuce wraps with apple slaw are the perfect healthy dish to kick off the new year with.

The tahini dressing really makes this apple slaw stand out.  In fact, I use it as a dressing for salads as well.  I love lettuce wraps because they fit into every diet.  Gluten free, grain free, vegan and raw.

Immune Boosting Antioxidant Juice

I did a small juice fast the other day, and this immune boosting juice was one that I made during that juice fast. You may think, wait a minute. Juice a sweet potato? Trust me. They make for some yummy juice. White Bean Chili (Vegan and Gluten Free)

White Bean Chili.  I have been wanting to do a slow cooker bean chili for quite some time.  Problem is, I wasn’t sure how to make a white bean chili.  So naturally, I ask my husband who is the chili expert in the house.

He also created the delicious sweet potato chili that is already on the blog.  I was very pleased with his recipe for this white bean vegan chili as well.  This white bean chili recipe is so simple and it can be made in the crock pot when you are not even home!  To me, those are the best kinds of recipes. 🙂

Homemade Cinnamon Rolls (Vegan)

I have been craving homemade cinnamon rolls for quite some time.  I am not sure why I was so intimidated by the idea of making them from scratch.  I guess it was because I wasn’t sure if I could get the cinnamon roll dough perfect.

For my homemade cinnamon rolls I didn’t want to rely on vegan butters like Earth Balance.  I wanted to try and use melted coconut oil instead. So I just dove right in and tried them. I have to say that I am pretty happy with the way these vegan cinnamon rolls turned out.
