Sweet Potato Veggie Burgers

I have been looking for homemade veggie burgers recipes.  These sweet potato veggie burgers are not my own recipe. However,  I make it a lot so I wanted to share it with you.  I found it on vegweb.  I made a few changes to the original recipe.

These sweet potato veggie burgers are easy to make, freeze well and a much better alternative to store bought versions.  I will typically make a double batch so I can freeze a bunch.  Then when you have a busy night with no time to cook dinner, you can whip these out, reheat and serve. Super easy.

They are sweet so kids will like them too.  I add avocado to the top of mine because avocados make everything better!  These would go great with my Healthy French Fries.

Sweet Potato Veggie Burgers

Sweet Potato Veggie Burgers

Prep Time 30 min Cook Time 30 min

Ingredients

  • 1 sweet potato, peeled and chopped
  • 1-1 1/2 cups gluten free rolled oats (depending on the size of your sweet potato)
  • 2 green onions chopped fine
  • 1 T fresh parsley, chopped
  • 1 T nutritional yeast optional
  • salt and pepper to taste

Instructions

  1. Preheat oven to 350 degrees.
  2. Boil the sweet potato until tender.
  3. Mash the cooked sweet potato. 
  4. Add the oats and stir in the seasonings.  I used my kitchen aid mixer to stir it well. 
  5. Form the mixture into patties. 
  6. Line or grease a baking sheet with a bit of oil and put the patties on it.  I use a Mr Misto oil sprayer to grease the pan.  Works like PAM , but much healthier because you can fill it with whichever oil you choose.  No chemicals.
  7. Place in the oven for about 30 minutes, or until the burgers are a bit crispy on the outside.  Enjoy!

    1. Awesome! I actually omit the oregano and use green onions in it's place. Tastes great that way too. I love this recipe because these are so easy to stick in the freezer for quick meals.
  2. I made these tonight, and they were delicious! I cooked them in coconut oil on the stove. I thought about putting onions in them, and if I'd ready your comment beforehand, I would have. Next time!
    1. Yay! So glad you liked them! They are great with some green onions! I need to try them your way too. The coconut oil probably gave it some good flavor. :)
    1. You probably could if you can fit them all in yours. I usually boil the potatoes, puree them and then mix everything together in my kitchen aid. My 7 cup processor could not handle everything at once.
  3. I love veggie burgers and usually buy Amy's brand, but have been itching to make my own. These were so easy and yummy and I no longer feel intimidated to make my own! I also added the onion. I have to ask, was I supposed to add avocados? I noticed you said something about avocados in the blog post but didn't see it included in the recipe.
    1. Glad you liked them! No, I didn't add avocados to the burger itself. I just eat the burgers with avocados on top. It's so good! Try it next time. :)
  4. I absolutely love these! I make them almost every week. A very nice find since most processed veggie burgers contain wheat gluten (never mind all the other unpronounceable stuff!).
    1. Believe it or not, 1 good size potato makes about 6 small burgers or about 4 large burgers. I usually double the batch when I make them.
  5. I just popped these in the oven. I thought I had a fairly small sweet potato, but I still got 7 1/2 burgers out of it! I scooped the mix with a large cookie dough scoop. They're so cute :) I didn't have green onions, so I had to sub red onion...I hope they turn out okay!

  7. I made these yesterday. Absolute heaven. I completely forgot about the parsley but had added ground coriander and a dash cumin. I have also added a dash garlic infused olive oil I had prepared for garlicy fries :-) Keep em coming :-) Thx Andrea
