Healthy No Bake Cookie Dough Bites.  Yes, you read that title right.  Healthy no bake cookie dough bites.  Such a thing does exist!  Who doesn’t love cookie dough?

These are sinfully good even with no refined sugar.  These no bake cookie dough bites may just be the most delicious things I have ever made.  It gets even better.

They only take minutes to make.  You could just be minutes away from popping one of these babies in your mouth.  I am drooling just looking at the picture.

Prep Time 10 min

Ingredients

Instructions

  1. Throw the almonds and oats in the food processor and blend into a fine powder.
  2. Then add dates and continue to blend. 
  3. Lastly, add the water, a little at a time until a paste like dough forms. 
  4. Roll dough into little balls and place on a lined baking sheet. 
  5. Put into the fridge to get the dough to firm up a bit.  Eat and enjoy!

  3. I made these today with sunflower seeds that I had on hand and they turned out delicious!!!! Great recipe and easy to make. They taste like real cookie dough!
    1. There is an app on my phone called my fitness pal, which also has a website. It has a function where you put in all the ingredients and number of servings and it will tell you the complete nutritional count for a given recipe. I don't use it often enought, but it's there.
      1. I have that on my phone and haven't used it since I quit processed sugar. I am not sure how accurate the calorie counts are for homemade foods. Everyone uses different ingredients. It's great for prepared foods, because you can scan the labels.
    1. Do you have any kind of chopping machine? A strong blender would work. So would a magic bullet, but you would have to blend each ingredient separately and then combine together. If you have none of those, you can probably cut the dates with a knife and then mash them, but I am not sure how you would crush the oats and nuts.
      1. The only blender I have is a smoothie maker. I guess I need to update my appliances! Maybe a food processor for my birthday... These no bakes sound great! Glad I found your blog.
          1. I've gotten a lot of my appliances for half price and practically new off of craigslist. Especially appliances you're not sure you'll use often. Now that I know I love juicing, I might splurge for something new when my $65 investment breaks down, and I didn't spend $150 on it to find out!
      1. I liked them alright, I wasn't wowed by it. I wonder if it had anything to do with using steel cut oats and a blender rathern than a food processor. I also cut the recipe in half since it was just me trying it out. I was able to get 10 cookies out of it. The calorie count estimated at 36 per cookie, just in case someone is interested. I could tast a hint of sweetness, but nothing like other cookies. Is that how it should have been? I'm going to try them again another day. Maybe add more dates for sweetness. I love that they are healthy and easy to make. I appreciate all your posts and exposed pieces.
        1. Maybe it has something to do with the blender? I have got nothing but great feedback from this recipe so I am sorry to hear you were not wowed. Did you use medjool dates? Maybe it was the steel cut oats. I am not sure.
          1. I used Sun Date Pitted Dates. I didn't even realize I got the wrong dates. However, I am happy to say, my 3 year old decided to try it and he liked it. I'll definitely be trying it again once I get the correct ingredients. I know eveyone has loved them, so I was disappointed mine didn't turn out. I definitely believe it was my error somewhere.           1. I just tried them again with Medjool dates, rolled oats, and all prepared in my new food processor. Results... DELICIOUSNESS!! Glad I tried them again with all the right stuff. :)

  4. What are cacao nibs?? Your picture looks like you put chocolate chips in yours. What brand do you use that you feel are "healthy"?? :)
    1. cacao nibs are pure chocolate with no sugar. They give a bitter taste that cuts the sweetness and also a good crunch. If you wanted to use chocolate chips, look for grain sweetened chips like Enjoy Life chips or carob chips. Both can be found in most grocery stores. Cacao nibs are found in health food stores.

  6. I made these yesterday. I think I'm gonna need a new food processor if I continue to food process dates lol. My 15 year old machine seemed to get a little weary when the dates went in. These were very good, and I just ate two for breakfast :). My super picky kids...my son ate part of one I sliced off for him and said it was "ok" but didn't want more. My daughter ate a whole one, but didn't want more. I may have better luck with your new Nutella bite since she loves Nutella, and neither one of my kids even like oats. More for me!

    1. You're welcome! I just made them myself. This time I added 1 tsp crushed vanilla bean and it was heaven! I highly suggest trying it. My daughter helps me too. She is 3.
  9. How many ounces are those 10-12 dates? There were only chopped dates available at my grocery store so I'm wondering how many cups/ounces that would be. Thanks! :)
    1. Maybe 1 cup chopped dates? I would start with that and see what the dough looks like. If it seems crumbly, you can add more. I would think it's somewhere between 1-1 1/2 cups. I would love to know for others who may try chopped dates.
