Raspberry Coconut Smoothie

It’s giveaway time again.  I know many of my recipes require a blender, so I wanted to be able to give you an opportunity to win one.  I contacted Blendtec and they gave me a Blendtec blender to review and another to give away.  This blender is awesome.  I especially love how wide the pitcher is.  Makes for very easy cleaning.  I whipped up this smoothie in no time at all.  In fact, there are set modes on the blender so you can just press a button and walk away.  Great for all us moms out there who are trying to keep up with the kids as we cook.

Not only have I made this smoothie with it, but I have also used it to grind oats into flour, and make soup.  It handled every job beautifully.  The twister jar is great because it can tackle the smaller jobs like hummus and almond butter.

Raspberry Coconut Smoothie

Prep Time 5 min

Ingredients

  • 2 cups raspberries (I used frozen, but fresh will work too)
  • 2 frozen bananas
  • 4 T coconut butter (shredded coconut work work too)
  • 1 1/2 cups coconut milk
  • 1 T chia seeds

Instructions

  1. Throw all ingredients in the blender and blend for about 60-90 seconds. 
  2. With the Blendtec, you just hit the smoothie button and it does the rest.

If you plan on drinking 1 serving and saving the rest, pour the remaining smoothie into ice cube trays and freeze for quick blending on another day. Enjoy!

  2. I would love a new, efficient blender. My old blender makes it difficult to blend anything that's not mostly falling apart on it's own.
  3. I have not gone vegan, but have recently changed my family to an organic diet, and we're moving in the direction of gluten free as well. No more processed foods, pretty much everything made from scratch, homegrown veggies, home baked bread, etc. I could really use a blender of this caliber for nut butters, making flours, and smoothies.   4. Diagnosed this year with chronic Lyme Disease, I am trying to change my diet to decrease inflammation as suggested by the Lyme doc. It would be so much easier to accomplish this with a high power blender. With the cost of medications, buying one is just not a possibility. Thanks for offering this give away.

  6. Your smoothie looks soooooo good. I've been wanting an appliance like this for a long time. Right now we have a cheapy big-box-store blender. It works, but does not do nearly as many things as this one would.

  8. Six months ago, I cut off all my chemically processed hair! This is huge because I have thick coily, kinky hair that i have chemically straightened for over 30 years! I did this to be an example of self acceptance and health for my 9 yr old daughter. I wanted her to see that she didn't need to "blend" in with others, possibly harming her health and self esteem in the process. This blender would be a wonderful tool because we are on a journey to take care of inside and outside. I mostly make all my own hair products and we also make healthy smoothies using our current blender. Would LOVE to have a blender that can allow me to expand into more healthful recipes as we continue our natural journey. NO more chemicals!

  10. It would be so amazing if I were to win this giveaway because I love smoothies, hummus and nut butters but they are very expensive. I wish I could make my own but just don't have the proper tools. I would love to be able to have these foods as it is hard to get the proper nutrition being vegan and being able to have these foods would make it much easier to get all of the nutrients I need.
