Salted Cashew Chocolate Clusters

I can’t think of a single person that doesn’t like cashews or chocolate.  Cashews are so buttery and delicious.  When you pair cashews with salted chocolate, you really get a match made in heaven.  These salted cashew chocolate clusters are so good.  In fact, my husband ate most of them in about 2 days! Salty and sweet is the best combination.  These salted cashew chocolate clusters can make a healthier snack alternative to unhealthy candy bars.

I need to warn you though.  These Salted Cashew Chocolate Clusters can be quite addicting.  Kind of like my Slow Cooker Maple Glazed Pecans and my Honey Roasted Almonds are.

Salted Cashew Chocolate Clusters

Prep Time 10 min Serves 1 1/2 cups     adjust servings

A healthy snack alternative to candy bars.

Ingredients

Instructions

  1. Melt the chocolate with the milk using a double boiler method.
  2. Line a baking sheet with parchment paper.
  3. Once the chocolate is melted, stir in the cashews to coat them in the chocolate.
  4. Spread the chocolate/cashew mixture onto the baking sheet. (I used a smaller baking sheet)
  5. Once the mixture is spread, sprinkle the sea salt on top.
  6. Stick in the freezer to firm up. (About 30 minutes)
  7. Once the clusters are firm, you can store them in the fridge or freezer. Either works.

Recipe Notes

If you don't like the bitterness of dark chocolate, you can also use milk chocolate. I used dark to keep my recipe vegan.

  2. These look so good! I will definitely try them! I have a novice question on the double boiler. I just bought one, but have never used one. Do you put water in the pot it sits in? What temperature do you use on the stove? Thanks!
    1. I take a pot and fill it with boiling water. Then I place a glass bowl on top of the pot. The chocolate will sit in the glass bowl. Once you see the chocolate start to melt, start stirring until all the chocolate is melted. It's quite an arm workout.

  4. Mmm, made this using salted cashews (didn't have raw) so I omitted the extra salt and made chocolate using coconut oil, cacao and maple syrup. Mmm mmm mmm
  5. Hi Melissa, this looks so good so far I have tried it twice but I have a problem with the chocolate not sticking to the nuts. It is all melted, but it doesn't seem smooth and becomes small clusters of chocolate. Could I have melted it too long?
    1. It is supposed to be like clusters of nuts and chocolate. I am sorry it's not coming out that way for you. :(
  6. Made it per the instructions and have had it i. The freezer for an hour and it is not firming up at all....i used hersheys chocolate chips...don't know if that would make a difference..what could I have done wrong?
    1. I'm sorry you are having an issue with it. :( I have never tried this recipe with Hershey's chips. Not sure if that was the problem.
  7. Yum! These are in the freezer now, and look like they'll be fantastic. I used Enjoy life chocolate chips, and coconut milk because I'm out of almond. I also added a few pecan pieces with the cashews. This will make a nice treat after Sunday dinner tomorrow and they only took minutes to make!
  8. I went to print this and the only thing that printed was the picture. Thought you would like to know. This isn't the first instance where this has happened to me. It is also only your site that does it to me. Others print out fine.
