Cookie Dough Overnight Oats

Cookie Dough Overnight Oats are where it’s at.  It’s been quite a while since I created an overnight oats recipe.

So I am bringing you these cookie dough overnight oats.  Imagine eating breakfast that tastes like a warm, oatmeal chocolate chip cookie!  Can breakfast get better than that?

Know Your Oats

There are many different types of oats.  Let me break them down for you.

Oat Groats – Also known as grain kernel, these are the oats right after they have been harvested and the inedible hulls have been removed.  Oat groats take the longest to cook and need to be soaked prior to using in overnight oats recipes.

Steel Cut Oats – Steel cut oats are made when you cut groats into smaller pieces.  Doing this helps them cook a little faster.  I prefer the texture of steel cut oats in my overnight oats recipes.

Rolled Oats – When you steam oat groats, they can be rolled into rolled oats.  Rolled oats also go by the name old fashioned oats.

Quick Oats – Quick oats are rolled oats that are steamed longer so they take very little time to cook. I would not recommend quick oats for overnight oats recipes.  They would get too mushy.

Now onto this new and delicious overnight oats recipe!  You can use steel cut oats or rolled oats depending on the texture you like.  Steel cut oats will retain a crunch, while rolled oats will make a smoother, more traditional oatmeal.

Instructions

  1. Mix all ingredients in a jar. Cover and store in the fridge overnight. I make up to 5 of these at a time for easy breakfasts all week! Enjoy!

  1. DO NOT MAKE THIS RECIPE - unless you are prepared to keep eating and eating and eating. OMG. I could not believe how good this was. I should have not made 5 servings because I ate 2.5 the first time!!!!!
  2. I tried this recipe and my steel cut oats are not very soft. Is that normal? This is my first time using them. That said, I'm in love with this recipe and very much looking forward to breakfast tomorrow!
    1. The steel cut oats will retain a bit of a crunch. If you like a smoother oatmeal, you can use rolled oats instead. Glad you liked the recipe! :)
  3. I love your website, and have used so many of your recipes, incl the overnite oats (the choc cherry are my favorite.) But a comment I have is that later in the day, despite how much I enjoy this breakfast in the AM, my usually very problem free stomach is not problem free, and I couldn't figure out why, until I realized, in these recipes, I'm eating double the amount of oats I usually do when I have the regular hot steel cut oats. The reason, I saw is that when I have the hot oats, I'm only having 1/4 cup, and in your refrigerator steel cut oats recipes, I'm eating 1/2 or double that amount! This addresses your 1st poster's comments. Just wanted to let you know, and any others who might be having similar issues! Will just cut it half from now on, and should be back to normal!

  4. Thank you sooo much for this recipe!! It's SOO good! I'm a college student and cooking oats in the morning for a good breakfast meant that I had to get up early before class. Now I don't have to do that anymore :) I've been following your blog for a couple of months now and am really grateful for your recipes! I made your pistachio truffles for New Year's Eve and they were a great hit. Just one quick question, can I make 5 of them and they'll be good until the end of the week?     1. Hi Lea! So glad you like this one! As long as you don't add fruit, you can make up to 5 at a time. If you want to add fruit, just add it before you eat them.

  6. Hi. After a few years of following you and making many of your yummy desserts I'm finally going to try the overnight oats!! I've been looking through all of them and think I'm going to start with this one. I don't have vanilla beans, would using vanilla liquid be the same or would it not be right for this? Thanks!!
    1. With liquid vanilla, you will taste the alcohol. If you use it, keep that in mind. I would only use 1/2 tsp too. I hope you enjoy the recipe!

  8. I'm out of healthy chocolate chips. What will happen if I sub Cacao nibs? Will I need to add more milk? (I bought the cacao nibs on a whim and don't know how to use them.)
  9. This has turned into my go-to overnight oats recipe lately. lol I have all the ingredients on hand so I don't have to spend money, and they're really easy to throw together. I wouldn't say they taste like oatmeal cookie dough (but then again, at least 75% of my taste is focused on texture), but they are still ridiculously tasty! I ran out of chocolate chips so I experimented, hoping to make these a little more like like oatmeal cookie dough. I added raisins. While that stripped a lot of the texture from the oats (chocolate chips AND raisins might be awesome), I cannot deny that I love the raisins. They suck up some of the moisture (making for a slightly firmer oatmeal, which I appreciate) and get all nice and plump and juicy... I love it. To me, these taste more like Raisin Bran that's sat around in milk for a while. I don't consider it bad, but some people might not like that. That's when the raisins are involved, though, obviously. :) Thanks so much for the recipe!
  10. I waited WAY TOO LONG to make your overnight oats! I ventured out with the cookie dough recipe for my first attempt, slightly concerned that my teen daughter and husband would turn their noses up at it. SUCCESS!!! One bite and my daughter grabbed the jar out of my hands and gobbled it up for her after dance snack. And so, we have a new breakfast and snack go-to! Thanks so much!
