Cranberry Coconut Donuts (Vegan)

Cranberry Coconut Donuts that are vegan.  Once again here is another donut recipe.  This time it’s healthy cranberry donuts.   They are just so darn easy to make.

I think out of all the donuts I have made so far, these cranberry coconut donuts are my daughter’s favorite.  She puts cranberries in everything.

In our house, cranberries have become a bit of a bribing tool.  “Meadow, eat your tomatoes.” She replies, “No.” “I will give you a cranberry if you do.”

It works too!  All the moms reading this will totally understand.  🙂  So I knew these would be a hit for her.

Did I mention that these were healthy too?  They also freeze well for when you need quick breakfast ideas.

Ingredients

Instructions

  1. Preheat oven to 350.
  2. In a medium bowl combine the flour, coconut, salt and baking powder.
  3. In a large bowl, combine the sugar, oil, applesauce and vanilla.
  4. After that, add in the egg, milk and orange zest.
  5. Then fold in the cranberries.
  6. Spoon onto greased donut pans and bake for 10-12 minutes. Enjoy!

  1. My hubby and I took all sugars out of our diet a year ago can u tell me alittle about coconut palm sugar? do u know how its made or is it processed?
    1. Before using coconut palm sugar, I had always used maple syrup and honey. I felt that these two sweeteners were less processed and even provided a small amount of nutrients. Recently, I asked Food Babe on Facebook what sugar she uses and she told me coconut palm. It has a lower glycemic index.     1. I used dried for these. I get them out of the bulk bin at Whole Foods. I have also used pomegranates in place of cranberries in this recipe and those come out great as well.
  3. I'm loving all your recipes! When you use maple syrup, do you use a darker or lighter syrup? I'm at the beginning of trying to cut refined sugar out of our diet, but being from Vermont we've always used a darker grade maple syrup. Does it matter? Thanks!
    1. Thanks for reading the blog. Glad you are enjoying it. The grade of maple syrup doesn't matter as long as it's 100% pure maple syrup. I grew up in Boston, so I know how good your syrup is in Vermont. :)
  4. Do you have any suggestions for those of us without donut pans who wanna make your donut recipes? =) I am gonna order some but I can't wait for them to get here!!
    1. You can try. It might work, although if you use coconut flour, you may need to add an extra egg. Please report the results so I can tell others. :)
  5. 2 things. Did you use unsweetened applesauce or sweetened and second instead of cranberries maybe substitute with a raw nut? Other then that, this looks so amazing and so simple. Thank you, Jennifer
  6. Do you just grind up oats to make oat flour? Or could you sub more whole wheat flour? I wasn't sure what to do about the oat flour. Also, how many does this make?
