Sweet Potato Chickpea Tots

I had these Sweet Potato Chickpea Tots while in Napa a few weeks ago.  They were so delicious and they are very kid friendly.  A great way to sneak some veggies and beans into your kids.  The original recipe came from Bellingham Middle School in MA, which is ironically next to the town I grew up in!  I made a few changes to the original recipe, and I think they came out great!  I topped them with my Homemade BBQ Sauce.  I hope you enjoy them as much as we did!

This recipe makes a lot of tots, but they do freeze very well.  To freeze, simply lay them on a lined baking sheet and place in the freezer.  Once frozen, you can pop them into a ziplock bag and freeze them for up to 6 months.  These healthy tots are also gluten free and vegan.

Maple Coconut Popcorn

I made you some Maple Coconut Popcorn! Popcorn is one of my girls’ favorite snacks.  Ever since we got our air popper, it’s been super easy to make too!  Normally, I just make a maple cinnamon version.  However, the other day, I had some leftover toasted coconut from my toasted coconut vanilla smoothie, so I added that to the mix.  Wow! This Maple Coconut Popcorn came out so delicious!  So good that I had to share with all of you.

Banana Chocolate Energy Bites

Have you indulged this holiday season?  I know I have!  Well today I have a healthier snack option for you with these Banana Chocolate Energy Bites.  They only contain 4 simple ingredients and zero refined sugar!  These are very kid friendly as well.

These healthy energy bites are vegan and gluten free.  They would make a great pre or post workout snack.  Or an after school snack for kids.  Since this recipe is also nut free, it’s a great choice for school lunchboxes.

Peanut Butter Banana Popsicles

I am always looking for ways to use up ripe bananas.  My daughter, Meadow, and I made these Peanut Butter Banana Popsicles together.   She loves helping me, and this recipe was a very easy one for her to help with.  You can see her in the picture below. If you like homemade popsicles, you may also like my blueberries and cream popsicles or my strawberry popsicles.

These popsicles can easily be made nut free by using sunflower butter instead of peanut butter.  I added some chocolate chips to mine, but that is a totally optional ingredient.  You can just do the peanut butter and banana if you prefer. If you love my 5 minute banana ice cream, you will love these!

Lemon Blueberry Donuts

I love combining lemon and blueberry together.  That is exactly what I did to make these Lemon Blueberry Donuts.  In addition to adding lemon and blueberry, I also added a creamy coconut frosting.  Coconut also goes very well with lemon and blueberry.  You can never have too many donut recipes, right?  Especially when they are healthy donut recipes.  My kids were trying to sneak bites of these lemon blueberry donuts as I was trying to take the picture!  The life of a food blogger mom!  If you also like lemon and blueberry, you may also like my lemon blueberry ice cream or my lemon blueberry cookies.

This healthy donut recipe is vegan and gluten free.  I used fresh blueberries in my recipe, but I bet you could also use frozen blueberries.  Just let them thaw before using in this recipe.  I think this healthy donut recipe would also be good with strawberries or raspberries!

Chocolate Chip Oatmeal Bites (Vegan)

Chocolate Chip Oatmeal Bites.  These healthy bites are very kid-friendly and perfect for little hands to grab.  Who doesn’t like chocolate for breakfast?

If you liked my coffee chocolate oatmeal bites, then you will love these!.  I actually thought about putting the coffee extract in these and then decided not to at the last minute.

If you like chocolate for breakfast I highly recommend my Chocolate Almond Butter Overnight Oats too.

These little oatmeal bites are gluten free and vegan.  If you are not a fan of chocolate, some chopped dates or raisins would be good as well.

If you went with the dried fruit, I suggest adding some cinnamon too.   That would be good.  These little bites are great for on the go and they freeze well too!
