Personalized Baked Oatmeal

In my family, we all have different tastes or dietary restrictions.  So this Personalized Baked Oatmeal is a win win for everyone!  This personalized baked oatmeal is not my idea though.  It comes from Brenda Bennet’s new cookbook, Sugar-free Mom: Naturally Sweet and Sugar-free Recipes for the Whole Family.  You may already know Brenda through her blog, Sugar Free Mom.  I had the pleasure of reviewing the book.   My whole family loved this baked oatmeal.  It’s super easy to make too!

Baked Oatmeal - My Whole Food Life

If you are new to clean eating, then Brenda’s book may be perfect for you.  Not only is it filled with lots of healthy recipes your family will love, she also explains the various types of sugars she uses as well as her kitchen essentials.  Brenda is a mom so she is busy just like all of us are.  These are recipes are easy and kid friendly.  Many are diabetic and low carb as well.   Not all the recipes are vegan, but many can be with a few tweaks. This personalized baked oatmeal is great if you have some picky eaters in your family.  I used flax eggs and almond milk to keep mine vegan.

Apple Spice Coffee Cake Muffins (Vegan)

Apple Spice Coffee Cake Muffins.  The other day I had a reader ask if I had a gluten free apple muffin.

I did not at the time, so that is why I created these Apple Coffee Cake MuffinsThese apple spice  coffee cake muffins are good with or without the crumb topping.  In fact, they are completely oil free if you skip the crumb topping.

I did half with and half without and both ways are delicious.  The applesauce in this recipe keeps these super moist.

My daughter kept trying to sneak some when they were cooling!  If you like apple treats you may also enjoy my healthy apple cobbler and my healthy apple pie.

Cranberry Corn Muffins

Do you like your cornbread sweet or savory?  I prefer it sweet so that is why I made these Cranberry Corn Muffins.  Imagine a sweet corn muffin loaded with cranberries.  I used fruit sweetened, dried cranberries, but you can use fresh cranberries if you like a little tart with your sweet.  These Cranberry Corn Muffins contain no oil.  I am really trying to limit my oils lately.  Don’t get me wrong, I love healthy fats, it’s just the use of oil I am limiting.

Cranberry Corn Muffins - My Whole Food Life

These corn muffins are vegan and gluten free.  If you didn’t want to use cranberries, you could use raisins instead.  I also did think about using fresh blueberries instead of the cranberries.  I just didn’t want to pay the price for fresh blueberries out of season.  I think these would also be delicious with my homemade cranberry sauce.  Or maybe even my blueberry chia jam.  Yum!

Squash Cranberry Muffins

Squash Cranberry Muffins are perfect for Fall.  My kids loved them!  The other day I roasted a kabocha squash.   I was going to use it in my Quinoa and Brussel Sprouts dish, but I ended up roasting it too long and it turned to mush.  So I pureed it and decided to use it in these Squash Cranberry Muffins.  My picky kids loved them!  They are super easy to make.  Vegan and gluten free.  I used part sorghum flour for these since I was out of oat flour.  Feel free to use gluten free oat flour as well.  If you enjoy this recipe, you may also enjoy my gluten free butternut squash bread or my pumpkin chocolate chip muffins.

Squash Cranberry Muffins - My Whole Food Life

I am still trying to use up all the food in my fridge and that is why I added cranberries and also chocolate chips.  You can really add in anything you like.  I know it’s hard to find cranberries that are not sweetened with sugar.  Well I found some at Natural Grocers that were apple sweetened.  I believe Eden Foods also sweetens their cranberries with fruit.

Apple Cinnamon Quinoa Bake

Quinoa is not just for savory dishes.  It can be used in many sweet recipes such as this Apple Cinnamon Quinoa Bake.  Even those this Apple Cinnamon Quinoa Bake closely resembles muffins, I decided they were a little too soft to call them muffins.

These almost remind me of my baked oatmeal recipes.  This is the kind of breakfast you eat with a fork more than your hand.  If you like baked oatmeal, but do not tolerate oats well, this is the perfect alternative.

Not only is this Apple Cinnamon Quinoa Bake tasty, it also has no added sugars!  I sweetened mine with dates, apples and applesauce.

Smoothies are great for taking your breakfasts on the go.  This Strawberry Shortcake Smoothie is perfect for that.  I added chia seeds and quinoa flakes to it, so there is good protein and fiber which should keep you full for a long time after.  Did you know that quinoa is actually a complete plant based protein?  That is why I love adding the flakes to my smoothies.  Another breakfast that is great for on the go is overnight oats.  If you haven’t given them a try, I highly suggest you do.   This strawberry shortcake smoothie is vegan and gluten free.  I hope you enjoy it.

Strawberry Shortcake Smoothie - My Whole Food Life

I have been buying up all the strawberries since they have been in season.   Then I freeze them so I can enjoy berries all year long.  I cannot justify the price of berries out of season.  Way too much for me.  That is why I stock up and freeze.  If you like smoothies, you may also like this and this.
