Slow Cooker Breakfast Quinoa

You have to try this Slow Cooker Breakfast Quinoa. Have you ever had quinoa for breakfast?  Quinoa can be very versatile.  I have used quinoa in cookies and stir fries in the past, but this was my first try eating quinoa for breakfastQuinoa is naturally gluten free, so it’s a great alternative to oatmeal.

This healthy breakfast quinoa was much better than I ever expected!  Slow cooking the quinoa allowed the sugars in the dates and apples to come out.  I added no sugar at all to this slow cooker breakfast quinoa.

Cinnamon Roll Overnight Oats

Cinnamon Roll Overnight Oats.  I have a new recipe for you.  Cinnamon roll vegan overnight oats.  Have you made overnight oats yet?

They are also often referred to as oats in a jar.  Basically, you just throw everything in a jar and refrigerate overnight.

What you end up with is a delicious oatmeal in the morning that requires no cooking!  I have been eating overnight oats for months now.

They are also very popular on my blog.  My favorite overnight oats recipe so far has been the Almond Butter Overnight Oats, but this cinnamon roll overnight oats recipe may be a close second.

It’s like the taste of a cinnamon roll in your morning oatmeal.  I like to store mine in mason jars.  They are perfect.

Homemade Cinnamon Rolls (Vegan)

I have been craving homemade cinnamon rolls for quite some time.  I am not sure why I was so intimidated by the idea of making them from scratch.  I guess it was because I wasn’t sure if I could get the cinnamon roll dough perfect.

For my homemade cinnamon rolls I didn’t want to rely on vegan butters like Earth Balance.  I wanted to try and use melted coconut oil instead. So I just dove right in and tried them. I have to say that I am pretty happy with the way these vegan cinnamon rolls turned out.

Gluten Free Chocolate Chip Gingerbread Muffins

Gluten Free Chocolate Chip Gingerbread Muffins.  I haven’t made too many gingerbread recipes this season.

Last year I made Gingerbread Donuts, Cranberry Filled Gingerbread Muffins and Healthy Gingerbread Cookies.  This year I have only really made Gingerbread Overnight Oats and No Bake Gingerbread Cookies.

I wanted to include some gluten free gingerbread recipes so that is how this one came about.

Baked oatmeal is so great.  It’s the oatmeal you can take on the go.  This is a very easy gingerbread recipe that takes very little time to make.

These are freezable as well, so feel free to double the batch and freeze some.  That way they can be for those mornings when you need a quick breakfast on the go.

Recipe Notes

I used jumbo muffin pans and got only 4. You can probably get double the amount using standard sized muffin pans .

These should last a week in the fridge and longer in the freezer. And don’t forget, you can use gluten-free oats to make them gluten-free. Enjoy!

Pear and Apple Quinoa

For those of you that have young children, you are very familiar with the baby food in squeeze pouches. Since my daughters struggled with eating, we went through a lot of them. They travel really well and it’s easy for kids to eat. However, they add up in price pretty fast and you are left with trash to throw away. I have been looking for a refillable squeeze pouch for a while now. Then I found out about a company called Little Green Pouch. They make easy to use refillable feeding pouches.

Olive Little Green Pouch

These little green pouches are:

  • BPA free, PCV free and phthalate-free
  • Freezable
  • Fill-able
  • Dishwasher safe
  • Squeezable (perfect for little hands)

Little Green Pouch is going to give away a large starter kit ($49 value) to one lucky reader. Contest is open to US and Canada residents only. Giveaway will end on November 27 at 12:00am CST.  Winner will be notified via email.  Good luck!

I knew when I first got the samples that I wanted to make a recipe to use in them. So I did a twist on my Crock Pot Applesauce.

This is a healthy recipe perfect for babies on soft solids as well as toddlers. My husband and I even enjoyed it and put in in our overnight oats. Great flavors!
