Sweet and Spicy Roasted Peanuts

These Sweet and Spicy Roasted Peanuts will become your new favorite snack.  Perfect for game day snacking too.  They pack big flavors with hints of sweetness and an extra kick of spices.  Just like my maple glazed pecans, this recipe is going to be hard to stop eating!

If you have an allergy to peanuts, I do think any other nut should work as well.  Sunflower seeds or pumpkin seeds might also work for a nut-free option.  You can make these up in about 10 minutes.  Super easy snacking!

I also think roasted chickpeas may be delicious with this seasoning.  I think I will try those next.  In the meantime, I hope you enjoy these roasted peanuts as much as we did!

Sweet Potato Chickpea Stir Fry (Vegan)

I am super excited to share this Sweet Potato Chickpea Stir Fry recipe since it contains many of my favorite foods! I could seriously live on sweet potatoes and chickpeas.

This recipe is great for so many reasons.  It makes A LOT of food, so it’s great if you batch cook and freeze some meals.  It’s also very inexpensive to make.

This sweet potato chickpea stir fry is vegan and gluten free.  It’s also very versatile.  I think you can add other veggies in here as well.  I think red bell peppers or kale would be nice additions.

I like to make large batch recipes like this and then freeze in serving sized portions. Then I can just grab and thaw exactly what I need, instead of thawing out this gigantic container and only using a little.

Coconut Crispy Bars

Crispy cereal reminds me of my childhood.  I have made rice crispy treats so many times as a child.  These Coconut Crispy Bars are a different spin on them.  If you are a lover of all things coconut, you will love these!

If you would rather see a chocolate version, you can check out this recipe.  These would make the perfect treat for school lunchboxes since they are nut free.

Coconut Crispy Bars

I used brown rice crispy cereal with no added sugar for these, but really, any rice crispy cereal will work.  This recipe also may be yummy with a chocolate rice crispy cereal.  This recipe is great because you get a delicious coconut flavor, with hints of vanilla, and the crispy crunch to finish it off.

If you love the coconut vanilla combo, you may also like my coconut vanilla overnight oats.

My daughter has tree nut allergies, so I love that this book is full of things she can eat!  We took the corn salad to a family gathering yesterday and it was a hit.  I also added avocado, because avocado makes everything better, right?

This book is not vegan, but there are TONS of vegan options in it.  This salad would be perfect for Cinco de Mayo too!  If you are looking for more Cinco de Mayo recipes, try my Homemade Salsa or Homemade Guacamole.
