White Chocolate Banana Cookies

We are about to head to Disney World for vacation, and I am trying to use up what I have on hand.  That’s how these White Chocolate Banana Cookies came about. I had some leftover vegan white chocolate chips from my White Chocolate Raspberry Squares, so I thought this was a perfect way to use them up.  After all, white chocolate and banana go so well together!  If you can’t find vegan white chocolate chips, you can most definitely use regular chocolate chips instead.  Macadamia nuts may also by another yummy option.  The best part about this recipe is it has just 4 simple ingredients!

These cookies are vegan, gluten free and healthy enough for breakfast!  The optional add ins are endless.  I think some shredded coconut would be delish in here personally.  Then again, I love all things coconut.

Gluten Free Pumpkin Muffins (Vegan)

Gluten Free Pumpkin Muffins.  Do you like pumpkin?  We eat it all year round.  My husband likes to take muffins to work and I usually make these muffins, but I only had a small amount of oat flour.

So I decided to tweak the recipe a bit and make these Healthy Pumpkin Muffins.  Not only are these healthy pumpkin muffins gluten free, but they also come with an extra boost of protein and fiber!

I used 1 1/2 cups chickpea flour to make up for the oat flour I didn’t have.  Did you know that 1 1/2 cups chickpea flour contains about 31 grams of protein and 15 grams of fiber?

White Chocolate Raspberry Squares (Vegan)

White Chocolate Raspberry Squares. If you make anything, you must make these ASAP!  We made a stop into our local vegan bakery, Reverie Bakeshop last weekend.

They are awesome by the way!  I noticed they started selling homemade, vegan white chocolate chips.  The ingredients were mostly clean too.

Just cocoa butter, evaporated cane juice, vanilla extract, oil and salt.  I bought a bag and promptly got to work making these White Chocolate Raspberry Squares.

This recipe only contains 5 simple ingredients.  It is gluten free and vegan.  If you replace the chocolate chips, or omit them, this can also be paleo friendly.

If you are not vegan, feel free to use regular chocolate chips if you like.  When Marcus came home from work and tried one of these, the first thing he said was, “Oh my god! These are heavenly!”  I guess that means they are tasty haha!  I hope you enjoy them too.

No Bake Oat Bars (Vegan and Gluten Free)

I have a new snack idea for you today.  This one is No Bake Oat Bars.  For this recipe, I was inspired by my homemade nutri-grain bars.

I wanted to make a similar recipe that requires less work and ingredients.  This easy oat bar recipe only call for a few simple ingredients.  I love that. So you probably have the ingredients to make them already.  You can use whatever flavor jam you like.

This recipe is also nut free.  If you like fruit bars, you may also like my blueberry oat bars.

In addition to being nut free, these bars are also oil free, vegan and gluten free.  You can make them up in minutes.  They also freeze well, so make a big batch if you like.

Sweet Potato Chickpea Tots

I had these Sweet Potato Chickpea Tots while in Napa a few weeks ago.  They were so delicious and they are very kid friendly.  A great way to sneak some veggies and beans into your kids.  The original recipe came from Bellingham Middle School in MA, which is ironically next to the town I grew up in!  I made a few changes to the original recipe, and I think they came out great!  I topped them with my Homemade BBQ Sauce.  I hope you enjoy them as much as we did!

Sweet Potato Chickpea Tots - My Whole Food Life

This recipe makes a lot of tots, but they do freeze very well.  To freeze, simply lay them on a lined baking sheet and place in the freezer.  Once frozen, you can pop them into a ziplock bag and freeze them for up to 6 months.  These healthy tots are also gluten free and vegan.

Quinoa with Roasted Garlic and Potatoes

Sometimes the best meals come out using leftovers in the fridge.  We had slim pickings in the fridge today, so I asked Marcus to make us something with them.  He is so much better at that than I am.  He came up with this Quinoa with Roasted Garlic and Potatoes.  Before he started the recipe, I made sure to tell him to measure everything so I could share it with you all.  It came out delicious.  The roasted garlic adds such great flavor.   If you like this recipe you may also like some of his other recipes.  The most popular ones are, sweet potato chili, peanut noodle stir fry and 3 bean soup.
