Lentils with Roasted Beets and Lemon

One of the best things about blogging is that you get to have some amazing experiences.  This past weekend was one for me.  I was invited to go to Napa, California for US Dry Pea and Lentil Council. In case you didn’t know, 2016 is the International Year of Pulses.  If you don’t know what pulses are, they categorized as beans, dry peas, chickpeas and lentils.  We spent the weekend at the Culinary Institute of America (CIA) in Napa learned just how versatile and nutritious these pulses are! I got to make some fabulous recipes that I hope to share with you over the next few weeks.  The first recipe I am sharing was my most favorite dish on the whole trip.  It was Lentils with Roasted Beets and Lemon.  The original recipe was a little more complicated, so I created a simplified version for you.

Chocolate Sweet Potato Muffins (Vegan)

The other day, we made a recipe that called for baking sweet potatoes.  Well we ended up with more than we needed, so I pureed some to make these Chocolate Sweet Potato Muffins.  These are delicious.

Dense, fudgy and filled with little bits of pecans. Marcus has been taking them to work all week.  This recipe is easy and freezes well too. If you like chocolate, you may also like my flourless chocolate muffins and my chocolate coffee cookies.

Toasted Coconut Vanilla Smoothie

This recipe makes 2 servings, so you can half it for a single serving.  This dessert smoothie is vegan, gluten free and paleo friendly.  It also contains zero processed sugar.  I used dates to sweeten this.  The toasted coconut and banana also adds a nice sweet flavor.

Lentil Stuffed Sweet Potatoes

I got a package of black beluga lentils a couple weeks ago and I have been dying to try it.  Today was the day. I made these Lentil Stuffed Sweet Potatoes and they were out of this world delicious.  Super easy to make too.

I cooked the sweet potatoes in my Instant Pot and it took no time at all.  Since I know not everyone has an instant pot, I will write directions for the oven as well.  If you like sweet potato recipes, you may also like my Sweet Potato Chili or my Sweet Potato Pasta with Brussels Sprouts.

If you can’t find the black beluga lentils, you can also use black beans or brown lentils.  Both should work well.  This dish is not only easy, but also budget friendly.

Vegan and gluten free too. I topped mine with some of my homemade dairy free sour cream and it was delicious!

Peanut Butter Bars (Vegan and Gluten Free)

Peanut Butter Bars.  If you have been following this blog for a while, you know how much I love nut butters.  I even wrote a whole cookbook about them!

If you love nut butter too, you will LOVE these peanut butter vegan bars.  They contain very little added sugar and only 5 ingredients.  You don’t even need a food processor or mixer to make them!

These bars are vegan and gluten free.  You can make them with sunflower butter or almond butter to keep them paleo friendly as well.

These Peanut Butter Bars are super rich too.  All you need is a little to satisfy your sweet tooth.  If you didn’t want to use chocolate chips, you can always use my 3 ingredient chocolate bar recipe for the chocolate part.

If you choose that route, I would suggest keeping the bars in the freezer, not the fridge.  If you also love peanut butter, you will also love my 3 ingredient peanut butter muffins and my 3 ingredient peanut butter cookies.

Strawberry Green Smoothie

I have a new smoothie recipe for you!  This is my Strawberry Green Smoothie. I don’t know about you, but I had indulged a lot over the holidays.  So after Christmas was over, I decided to quit all sugar, including maple syrup, for a while.  It was HARD, but I did it!  Once I had been sugar free for 3 days, I started a really good smoothie cleanse.  It’s called the 10-Day Green Smoothie Cleanse from JJ Smith. I really didn’t do it to cleanse, but more to re-set my body after eating all the junk.  I LOVED it and it renewed my love for green smoothies again!  It also inspired me to make this healthy smoothie recipe for you.

I really enjoyed this particular cleanse because it allows you to snack in-between the smoothies.  Some of the allowed snacks are nuts, seeds, fruits and veggies.  You can also eat hard boiled eggs, but I didn’t because I am vegan. Another great discovery I made, was that water works just as well as almond milk when blending smoothies.  I really didn’t even notice a difference!  So I am using water from now on.
