Lentil Stuffed Sweet Potatoes

I got a package of black beluga lentils a couple weeks ago and I have been dying to try it.  Today was the day. I made these Lentil Stuffed Sweet Potatoes and they were out of this world delicious.  Super easy to make too.

I cooked the sweet potatoes in my Instant Pot and it took no time at all.  Since I know not everyone has an instant pot, I will write directions for the oven as well.  If you like sweet potato recipes, you may also like my Sweet Potato Chili or my Sweet Potato Pasta with Brussels Sprouts.

If you can’t find the black beluga lentils, you can also use black beans or brown lentils.  Both should work well.  This dish is not only easy, but also budget friendly.

Vegan and gluten free too. I topped mine with some of my homemade dairy free sour cream and it was delicious!

Peanut Butter Bars (Vegan and Gluten Free)

Peanut Butter Bars.  If you have been following this blog for a while, you know how much I love nut butters.  I even wrote a whole cookbook about them!

If you love nut butter too, you will LOVE these peanut butter vegan bars.  They contain very little added sugar and only 5 ingredients.  You don’t even need a food processor or mixer to make them!

These bars are vegan and gluten free.  You can make them with sunflower butter or almond butter to keep them paleo friendly as well.

These Peanut Butter Bars are super rich too.  All you need is a little to satisfy your sweet tooth.  If you didn’t want to use chocolate chips, you can always use my 3 ingredient chocolate bar recipe for the chocolate part.

If you choose that route, I would suggest keeping the bars in the freezer, not the fridge.  If you also love peanut butter, you will also love my 3 ingredient peanut butter muffins and my 3 ingredient peanut butter cookies.

Peppermint Candy Cane Cookies

This is the time for all things peppermint!  These Peppermint Candy Cane Cookies would be great to serve at your holiday parties.  Or you can leave some out for Santa.   We usually make the Flourless Chocolate Chip Cookies for Santa, but we may switch it up this year.  To make these Peppermint Candy Cane Cookies, I slightly tweaked my Chocolate Coffee Cookie recipe.  I hope you enjoy them! Healthy Rainbow Plate

Have you heard of the blog, This Rawsome Vegan Life from Emily von Euw?  It’s pretty sweet.  Lots of yummy raw desserts and recipes! Today I am reviewing her latest book, The Rawsome Vegan Cookbook – A balance of raw and lightly-cooked, gluten free, plant based meals for healthy living.  I also have her other 2 cookbooks, Rawsome Vegan Baking and 100 Best Juices, Smoothies and Snacks, so I was really excited to get my hands on this one as well.

If you are into super simple recipes that showcase whole foods, this book is for you.  Most of the recipes are very simple and they call for just a few ingredients.  The book is divided into two parts: raw and cooked. Each recipe has a beautiful full color photo. My mouth was watering when I looked through it.  Some of the other recipes I am excited to try are the Rawsome Pizza, Sweet Corn Chowder, and the Creamy Butternut Squash.  This would be the perfect book to get someone that is starting on a healthy, vegan diet.  To find out more about the book, click here. Cashew Caramel Squares (Vegan and Paleo)

Cashew Caramel Squares.  OMG, you guys!  I just made the most epic treat.  Initially, I was trying to make a cashew brittle, but the end product was more of a caramel-like texture.

The taste was out of this world delicious!  The best part?  You only need 4 simple ingredients!  If you like desserts with small ingredient lists, you may also like this post.
