I have another 3 ingredient recipe for you!  This time it’s 3 Ingredient Oatmeal Cookies.  These 3 Ingredient Oatmeal cookies are also nut free, so they are perfect for school lunchboxes.  There is also no added sugar in these oatmeal cookies.

I also added a few chocolate chips to my oatmeal cookies, but that is totally optional.  I think these oatmeal cookies would be great without the chips too.   You can make these healthy oatmeal cookies in just a few minutes!

Strawberry Oatmeal Muffins

I like to make muffins with a filling.  That is where these strawberry oatmeal muffins come in.  Instead of just adding strawberries to the batter, I thought it would be better to make a strawberry cream.  My daughter calls them muffins with surprises inside.  These strawberry oatmeal muffins are very easy to make.  I used a strawberry cashew cream, but you can also use strawberry yogurt if you like.  Not only are these muffins made healthier, they have a nice protein boost thanks to the filling.  These might be a hit with pickier kids.  My picky 4 1/2 year old loved them. Oatmeal Cream Pies

There is just something about oatmeal cookies.  Almost everyone loves them!  Myself included.  I know many people are fans of the oatmeal cream pies found in the snack section of your local grocery store.  Well I decided to try a vegan and gluten free version of those! 🙂  Mine are oatmeal cream pies with a maple cream.  They are delicious!

I made mine a little different.  I added a maple cream because I just love maple syrup and they reminded me of the oatmeal cream pies I used to buy from Whole Foods.  They were in the bakery.  OMG so good!  However, I don’t think they were vegan or gluten free.  My recipe may not taste exactly like Little Debbie’s Oatmeal Cream Pies, but they are still delicious.  Oil free and refined sugar free!

Carrot Cake Baked Oatmeal

Do you like carrot cake?  You can have it for breakfast with this Carrot Cake Baked Oatmeal.  If you have been following me for a while, you know I love my oats and oatmeal.  Baked oatmeal is a great way to take your oats on the go.  Baked oatmeal is like oats in muffin form.

Another thing that makes baked oatmeal so great is that it can be made ahead of time.  I usually make a double batch and stick one batch in the freezer.  That way, if I am feeling lazy one morning, I have a healthy breakfast option to pull out of the freezer. Just reheat and you are good to go!

I must admit, I am not a fan of carrot cake anything.  My husband is a huge fan of anything carrot cake, so he tasted tested these and gave his approval!  It took me two tries to get this recipe perfect.  I hope you enjoy it.
