Have you tried roasted chickpeas?  They make such a delicious snack.  You can make them sweet or savory. Today I opted for savory to make these Curry Roasted Chickpeas.  These were so good.  I had to hide them from my husband, because he kept trying to eat them before I could shoot the photo!  My 6 year old liked them too. They make the perfect healthy snack.

These roasted chickpeas are perfect for those with allergies since they are nut free, vegan and gluten free.  Safe for school lunch boxes too.  If you wanted more of a sweet curry flavor, you can add a little maple syrup.

Green Lentils and Mushrooms

I have had this huge bag of lentils in my pantry that I have been meaning to use.  That is where this Green Lentils and Mushrooms dish came about.  Lentils are so versatile.  My most favorite lentil dish is my Lentil Sloppy Joes.  A must try if you haven’t already!  Green lentils have an earthy flavor that goes so well with the mushrooms.  I added crispy shallots to add a sweetness to balance out the earthy flavors.  It went very well!  I also think spinach or kale could be a yummy addition to this.

Fall Rice Bowl (Vegan and Gluten Free)

Fall Rice Bowl.  I am loving that fall is here.  Cooler air and all the yummy fall produce!  Squash is my favorite seasonal vegetable.  It went so well in this healthy vegan Rice Bowl.

Then again, squash goes so well in just about anything!  Sweet or savory.  I used butternut squash, but I also think kabocha squash would work nicely.

If you don’t eat rice, this can also be made with quinoa.  I chose wild rice because I think the earthy flavor goes so well with the squash. I think kale or even mushrooms might be other nice additions.

Mini Apple Pies

OMG you guys!  You are in for a treat.  These Mini Apple Pies are epic and perfect for Fall. They best part is they are completely free of refined sugars, grains and flours!  The base I used is the same one in my Lemon Coconut Cookie Cups.  It worked perfectly.  I love that these are perfectly bite sized for portion control.

Kale Apple Salad (Whole Foods Copycat)

My kids love to get lunch at Whole Foods.  Every time I go there, I always try something new. I tried the kale salad last time and loved it.  It was slightly too sweet for me, so I immediately got the idea to make my own homemade Kale Apple Salad.

I think my version came out really good.  I hope you do too. If you love kale, you may also like my white bean kale soup or my balsamic kale chickpea salad.

I used to have a really hard time eating raw kale.  That is until I found out how to massage kale.  It makes the kale so soft in texture and much easier to eat. It’s seriously life changing!!
