Watermelon Lime Sorbet

We bought this huge watermelon the other day.  While the flavor was very sweet, the texture was a bit weird, so I decided to make this Watermelon Lime Sorbet with it.   What an awesome decision that was!  It came out SO GOOD!!  There is also ZERO added sugar. This healthy sorbet recipe is vegan, gluten free and paleo.  You only need 3 simple ingredients!  I used my ice cream maker, but if you don’t have one, you can always make popsicles instead.  I like these molds.

Watermelon Salad with Blackberries and Basil

I am so happy that watermelons are showing up at the store again!  Watermelons grow so well here in Texas, so they are always very reasonably priced.  Not to mention juicy delicious!  We live off watermelon all summer.  I have told you guys in that past about my basil plant growing out of control.  Well this watermelon salad recipe used more basil as well.   Basil goes so well in this watermelon salad. This watermelon salad with blackberries and basil is super easy to make.  Vegan and gluten free too.   You will love it.  I promise. 🙂

Watermelon Mint Popsicles

When I think of summer, one of the first things that comes to mind is watermelon.  How awesome is a fresh slice of watermelon, right?  It reminds me of being a kid again.  I have already done a watermelon punch , so why not do some popsicles too!  These watermelon mint popsicle are perfect for a refreshing treat on a hot summer day. And who doesn’t like a good watermelon popsicle recipe?

My kids are loving these popsicle molds by Tovolo.  One of the things I like best about the molds, is the drip catch.  Perfect for my kids, who tend to eat these slowly.  Do you have them too?  If not, you should get some.

Watermelon Mint Popsicles and a Giveaway!

Prep Time 5 min Serves 6 popsicles     adjust servings

Ingredients

  • 4 cups watermelon
  • 10 mint leaves

Instructions

  1. Blend both ingredients in a blender for about 90 seconds.
  2. Pour into popsicle molds . They should be ready to eat in about 4 hours. Enjoy!

Refreshing Watermelon Punch

I love my juicer.  Ever since I bought it, I have been juicing every morning.  I feel great.  The other day, I bought a huge watermelon from Sprouts.  So I decided to make this punch.  The taste of watermelon instantly takes me back to summer BBQs when I was a kid.  My parents used to have big summer parties and watermelon was always a staple.

This is easy to make and very refreshing.  I loved that it is a “juice” I can give my kids.  They loved it too!  If you don’t have a juicer, you can do it in a Vitamix and strain, or even leave it chunky.  You could also make some yummy popsicles using these molds
as well!

Refreshing Watermelon Punch

Prep Time 10 min

Ingredients

  • 4 cups watermelon
  • 1-2 T lime juice
  • 1-2 cups mineral water (optional)
  • Garnish with thinly sliced limes

Instructions

  1. Juice or blend the watermelon and then add in the lime.
  2. Add a little lime at a time until you get it to your liking.

Recipe Notes

My batch made a pretty small amount. About enough to fill a large mason jar with no ice. If you are making this for a party, I would suggest doubling the batch. It should keep in the fridge for at least 4 days. Enjoy!
