Carrot Cake Breakfast Cookies

Who doesn’t want cookies for breakfast?  You can have them if you make these Carrot Cake Breakfast Cookies!  This is also a great way to sneak in some veggies for breakfast.  These Carrot Cake Breakfast Cookies have no added sugar.

You can make these healthy breakfast cookies in under 20 minutes.  Super easy!  Very inexpensive too.  These healthy breakfast cookies are vegan and gluten free.   I hope you enjoy them as much as we did!

These cookies freeze well too, so feel free to make a huge batch and freeze half.

  1. Preheat oven to 350.
  2. In a large bowl , mix the mashed bananas, applesauce and vanilla extract.
  3. Then add the remaining ingredients and mix well.
  4. Spoon cookies onto a lined baking sheet. I used a cookie scoop and then flattened them with the back of a spatula .
  5. Bake for 12-15 minutes.
  6. Let the cookies cool before transferring them to an airtight container.
  7. Keep these cookies stored in the fridge. They should last a couple weeks. You can also freeze them.

  1. I'm wondering if I could make these using the pulp from my carrot/apple juice in place of the carrots and apple sauce. It has ginger in it too usually, but I don't think that would be a bad thing in this case. I'll give it a try.
    1. I am going to say steel but oats may work in these as well. Please report the results so I can tell others in the future. :)

  3. These look great except I cannot tolerate bananas. Nope. Never. Do you think maybe I could use pureed white beans with a little vanilla nondairy milk and watch to see if baking time needs adjustment? Opinion? If I try It, I'll report back. Thank you.
  4. I made them without the pineapple and with coconut and they turned out wonderfully! I also skipped some of the spices and the raisins. I found cooking them a little longer worked a little better as well.
