Who doesn’t want cookies for breakfast? You can have them if you make these Carrot Cake Breakfast Cookies! This is also a great way to sneak in some veggies for breakfast. These Carrot Cake Breakfast Cookies have no added sugar.

Carrot Cake Breakfast Cookies
Enjoy cookies for breakfast with this healthy recipe! No added sugars.
Ingredients
- 2 ripe bananas
- 1/2 cup shredded carrots
- 1/2 cup unsweetened applesauce
- 2 cups gluten free rolled oats
- 1/2 cup dried pineapple (fresh may work too)
- 1/2 cup raisins
- 1 1/2 tsp cinnamon
- 2 tsp vanilla extract
- 1/2 tsp sea salt
Instructions
- Preheat oven to 350.
- In a large bowl , mix the mashed bananas, applesauce and vanilla extract.
- Then add the remaining ingredients and mix well.
- Spoon cookies onto a lined baking sheet. I used a cookie scoop and then flattened them with the back of a spatula .
- Bake for 12-15 minutes.
- Let the cookies cool before transferring them to an airtight container.
- Keep these cookies stored in the fridge. They should last a couple weeks. You can also freeze them.
