Amazing 3 Bean Sweet Potato Chili (Vegan)

This Sweet Potato Chili recipe is fantastic!  I cannot take credit though.  My husband Marcus created it.  He is the chili guy in the family.  Actually, up until recently, he was the cook too!

I have learned a great deal from him. 🙂  Also, I should mention, this sweet potato chili is super easy to make.  You just throw everything in a pot and cook.

It would probably be extra good slow cooked in the crock pot.

We brought this healthy chili to a family member’s house on Thanksgiving.  Everyone that tried it, loved it.   This recipe also makes a large amount so you can freeze some for those busy days.  I freeze it in serving sized containers.

Amazing 3 Bean Sweet Potato Chili

Amazing 3 Bean Sweet Potato Chili

Ingredients

  • 3 cups veggie stock
  • 2 cups black beans
  • 2 cups kidney beans
  • 2 cups pinto beans
  • 1 28 oz can organic diced tomatoes or about 7 cups diced tomatoes
  • 1 onion diced
  • 1 cup corn (please try to buy this organic)
  • 2 sweet potatoes diced
  • 4 med-lg garlic cloves minced
  • 1 T chili powder
  • 3/4 T cumin
  • 1 tsp smoked paprika
  • 2 T oil (we used grapeseed oil)

Instructions

  • We use dried beans and just soak them overnight. Boil them for about 10 minutes in the morning. Makes for a much cleaner taste.
  • Take all the ingredients and throw them in a large pot.
  • Cook on high for about 3 hours covered stirring every once in a while.
  • For the last 1/2 hour cook uncovered and you can also add about a T of flour to thicken the sauce if needed. We used brown rice flour.

This makes a ton of chili. If you don’t eat it all, it should freeze nicely and then you will have a backup meal for a day when you don’t feel like cooking. This came out so well that we are probably going to make this for our family thanksgiving meal. After all, we are the weird vegans of the family.

  1. So excited to make this! You've convinced me to use dry beans not canned :) I'm doing the crock pot. I waa thinking about 3 hours would be good? Do you think that will work it longer? Also do I need the oil for crock pot.. Waa going to do olive oil if need it
    1. I have been making this without the oil forever, so you can just omit it. IF you are only going to cook this 3 hours, I would soak the beans overnight and then boil them in the morning for at least 30 minutes before you throw them in the crock pot. That is to ensure they get completely soft for you. I hope you enjoy the recipe!
      1. Melissa & Diann, I also want to do it in my Instant Pot... but, I don't think you meant to say 3 minutes, did you? Would it be 30 minutes perhaps? Would love to know how your reader did it; I mean did she soak the beans first and cook them first I wonder? If she's reading this, perhaps she could comment... thanks!
        1. I think the 3 minutes is for canned beans. If you are using dried beans, it will be longer. Not sure the exact time since I haven't tried, but I would guess 30 minutes?
  2. Ok I made this today and its fantastic!! However, I did a few things differently. I took just a little bit of coconut oil and sautéed the onions in a skillet then added the garlic a bit later and sautéed some more. Then I took all the spices and put in the skillet with the onion and garlic mixture. I toasted the spices for about 2 min. It brought out a deeper flavor with the spices. Then I put everything in the crockpot as directed. Also, I am not vegan and I wanted extra protein so I cooked 4 chicken breasts and used a fork to shred. When the chili was done I stirred in the chicken. This recipe was a winner for sure. It would be great without the chicken for all my vegan friends!
    1. Yes, but if you use cans, you may also need the stock. I would drain and rinse the canned beans before using them.
  3. I am not experienced with dry beans. When you say 2 cups - are you meaning 2 cups dry or after soaked? This looks great. Thanks for your great recipes! :)
    1. Thank you! These measurements are for beans after they are soaked, so if you are using cans, it's about 1 can for each bean. :)
  4. So how much of each dry bean would I use to soak? I think I read in comments that beans were after soaking but I don't want to soak more beans than I need. Or not to many more. I can't wait to make this!
