Amazing 3 Bean Sweet Potato Chili (Vegan)

This Sweet Potato Chili recipe is fantastic!  I cannot take credit though.  My husband Marcus created it.  He is the chili guy in the family.  Actually, up until recently, he was the cook too!

I have learned a great deal from him. 🙂  Also, I should mention, this sweet potato chili is super easy to make.  You just throw everything in a pot and cook.

It would probably be extra good slow cooked in the crock pot.

We brought this healthy chili to a family member’s house on Thanksgiving.  Everyone that tried it, loved it.   This recipe also makes a large amount so you can freeze some for those busy days.  I freeze it in serving sized containers.

Amazing 3 Bean Sweet Potato Chili

Amazing 3 Bean Sweet Potato Chili

Prep Time 20 min Cook Time 3 hr


Ingredients

  • 3 cups veggie stock
  • 2 cups black beans
  • 2 cups kidney beans
  • 2 cups pinto beans
  • 1 28 oz can organic diced tomatoes or about 7 cups diced tomatoes
  • 1 onion diced
  • 1 cup corn (please try to buy this organic)
  • 2 sweet potatoes diced
  • 4 med-lg garlic cloves minced
  • 1 T chili powder
  • 3/4 T cumin
  • 1 tsp smoked paprika
  • 2 T oil (we used grapeseed oil)

Instructions

  • We use dried beans and just soak them overnight. Boil them for about 10 minutes in the morning. Makes for a much cleaner taste.
  • Take all the ingredients and throw them in a large pot.
  • Cook on high for about 3 hours covered stirring every once in a while.
  • For the last 1/2 hour cook uncovered and you can also add about a T of flour to thicken the sauce if needed. We used brown rice flour.

This makes a ton of chili. If you don’t eat it all, it should freeze nicely and then you will have a backup meal for a day when you don’t feel like cooking. This came out so well that we are probably going to make this for our family thanksgiving meal. After all, we are the weird vegans of the family.

  1. If I'm using canned beans should I use 4 cans to equal the 2 cups dried beans you used or was your yield 2 cups which is 1 can?
  2. Hi Melissa, Do I absolutely need to stir it while it's cooking? I am looking for recipes that I can put all the ingrediatents in the morning and come back to it in the afternoon. Thanks Valeria
      1. Why does this need to cook for 3 hours? There are no instructions so I assume you just put it all together at once, right?
        1. Geez! I'm sorry. I am not sure where the instructions went. :( Yes, put everything in at once. Cook for 3 hours in the slow cooker. If you are making on the stove, bring to a boil, then turn down, cover and simmer until cooked.
  3. OMG When you said this makes alot that is an understatement LOL It's more like it makes a TON!! I had to split it up into one VERY large pot and rest into the crock pot. 6 cups of dry beans is major and I only have a small crock pot it's just my hubby and me in our family wish I had paid closer attention but I will be freezing so I think I am good for the winter lol. The only problem I didn't realized this until I began putting it in the crock pot (obviously I have a mental scale disorder..my hubby tell me that all the time :( ) so it became a big mess and half the ingredients are in the pot and other in the crock pot hoping to combine once everything is done.
    1. It's 6 cups of cooked beans, not dried beans. Beans double in size once they are cooked. The good thing is that this recipe freezes great, so you can definitely save some for later. :)
