Maple Cinnamon Roasted Chickpeas

Maple Cinnamon Roasted Chickpeas. Nut free, gluten free and vegan.  This may be the easiest snack you ever make.  Seriously.  You need to try them asap!

First, I found Kale Chips, and I thought I was in love.  Then it was Cauliflower Popcorn.  But this snack beats them all hands down.

It will satisfy your sweet craving without adding the pounds.  Even my daughter, Meadow, who claims to hate all beans, ate them.

In fact, she grabbed the bowl away and took off with it!  Man, she is a sneaky one sometimes! It was gone pretty darn fast.  I am roasting another batch as I type this.

Ingredients

Instructions

  1. Preheat oven to 350.
  2. Mix everything well in a bowl.
  3. Pour the mixture onto a parchment lined baking sheet.
  4. Roast in the oven for about 45 minutes, shaking every 10 minutes to keep them from burning. That’s it. Easy peasy!

  2. How about putting chickpeas in a dehydrader...do you thinkthey will come out crunchy and if so..would I have to put the syrup before or after
  3. My new favorite snack!!! Although next time I will need to put them in the oven a little longer than 45 minutes bc not all of them were crispy , but still delicious!!!!
    1. Store them in a container with rice scattered on the bottom. The rice should help absorb any moisture so the chickpeas stay soft. I keep them in the pantry.
  4. I followed the directions to a "T" for this recipe and they came out very chewy. Not one is crisp. I cooked them for a total of 60 minutes at 350 and still chewy. Love the flavor, not the chewiness. My oven is not off as it cooks everything else according to directions. Any tips? Thanks!
    1. I'm sorry they did not work out for you. I would say, maybe cook them a bit longer? They are just so easy to burn that I like to keep an eye on them.
  5. I have been looking for a way to get chickpeas in my diet. In fact, I am trying to put more beans for my protein source instead of meat. I will probably never be totally meat and dairy free, but I am definitely limiting products from these sources and researching the brands. Your recipes all sound so interesting. I am definitely going to try this.
    1. A good way to use chickpeas are in veggie burgers they have a better texture to me. Just mash with a fork add veggies, herbs, and a binder like bread crumbs bake or pan fry and voila :)
  6. I didn't read through each comment but I was wondering if bringing the dried beans to a boil then cover and let sit till they soften. That's a quick bean trick if you didn't soak them the night before.
    1. Good to know. In my experience, chickpeas take the longest to soften, so I always soak overnight and then boil uncovered for at least 30 minutes. I will try to boil them covered next time.
  7. I see maple syrup in a lot of recipes you post. I'm wondering if it is Dr. Fuhrman, ETL approved. Is pure maple syrup "raw"? Where do you buy it? I'd like to add that I appreciate and enjoy all of your posts, recipes and videos. Last night I watched the one with the lemon balls where your daughter helped you, she is absolutely adorable!
  8. This looks really interesting! I never would've thought to do this with chickpeas... it'd be a great february snack when the maple sugar/syrup starts flowing! :-)
