Coconut Cream Larabars

These Coconut Cream Larabars are where it’s at. No matter who you talk to, most everyone seems to love larabar,  My two most viewed posts on the blog are the Peanut Butter Granola Bars and the Homemade Clif Bars.

The first larabar recipe I created was the chocolate brownie.  I think these healthy larabars came out even better!

These literally took about 5 minutes to make.  Can it get any easier?  I love recipes like this.  The store bought Larabars cost $1.50 a piece.  That can get pretty pricey if you are buying a lot of them.  So here is my recipe.  I hope you like it as much as we did.

Prep Time 20 min

Instructions

  1. Mix the almonds, coconut and cashews in the food processor until fine.
  2. Then add the dates, oil and water and pulse until a dough forms.
  3. Line an 8X8 pan with parchment paper leaving enough room for some to come out the sides. That way, the bars will be easy to remove and cut with a pizza cutter.
  4. Press down the down so that it is packed well and place in the fridge to set.
  5. It will take an hour or two. Slice and eat. These should keep in the fridge for a couple weeks.

  2. I have some chopped dates coated with oat flour. Any idea how much to use to match the amount called for in this recipe? Ounces will do; I have a scale. Thanks!
    1. I have no idea how many ounces. I think maybe 2 cups? I would love to know if the recipe works with chopped dates. Please report the results.
  3. Ran out of dates so I threw in some dried apricots and a handfuls of raisins and the flavor is still really good. Also needed more water and coconut oil. mmmmmm.....so good and filling! How many servings/bars does your original recipe make? Just so I don't eat the pan!! may need to cut them up right now.
  4. One of the women in my Triathlon training group made these and let us taste them - we were SOLD! Now we are all making them to take with us on the long bike rides. So much better the gels and goo.
  5. Almond Joy! That is the variation I made this evening. I used all almonds, added 3 Tbs of unsweetened cocoa powder and 1/4 teaspoon of pure almond extract. Yum!
    1. Awesome! I have one reader that uses this recipe as a base so she can create her own flavors. Personally, I love making these with a bit of almond extract.
  6. These are so good!! The only issue was that I do not have a food processor so I tried to make it in my blender. After violently shaking my blender back & forth for about 10 min trying to get the food to fall down in the stupid hole in the middle I gave up on the blender & tried my magic chopper (by the way I did not witness any magic). After banging on the less than magic chopper for about 5 minutes I decided it was good enough!! I burned a lot of calories making these but they were worth it :) I rolled them into meatball sized balls and refrigerated them. I think I need a food processor!! :)

  7. Holy cow! I had no idea these would taste THIS good. Never had a larabar, but thought I would try it. Plus I got to play with my food processor. :) just started the Paleo thing 11 days ago and I wanted something to grab for an easy snack. THANK YOU!
  8. Larabar has discontinued my favorite flavor, Gingersnap! (my other fave is Coconut Cream). Is there any chance you could whip up a recipe for those? Please?? =)
    1. Sure, when I get a minute. I love gingersnaps. Do you happen to remember the ingredients or are they still on the website?
      1. website doesn't have it anymore, but a Google search says dates, almonds, pecans, ginger, cinnamon, and cloves. :)

  11. Thanks for this recipe - it's great! Just a random question - how long have you found that medjool dates last? The container said to refrigerate which I thought was strange as I wouldn't refrigerate prunes or anything, but just wondering if you knew how long they would be good for. Having said that, I will probably use them trying out your other Larabar recipes!
    1. Glad you liked it! I store my dates in a glass jar in the pantry. I had no idea I was supposed to refrigerate them. Whole Foods sells them in the bulk bin and they are not refrigerated. I go through mine so fast so there is no worry about them going bad. Lol.
