Chocolate Chip Cookie Dough Larabars

Chocolate Chip Cookie Dough Larabars.  Okay I am officially addicted to homemade larabars!  My first recipe was the Chocolate Brownie Larabar, then there was the Coconut Cream Larabar and now the Chocolate Chip Cookie Dough Larabar.

I have to say the coconut cream is still my favorite, but the cookie dough comes in at a close second.  You can roll them into balls as well if you don’t want to do bars.

These are just so easy to make and they contain just a few ingredients.  This was my second attempt for this flavor.  The first one came out good, but I didn’t think it was quite right.

This batch came out much better to me.  Hope you like it as well.

Ingredients

Instructions

  1. Mix the cashews in the food processor until you get a fine powder.
  2. Then, add the all of the ingredients except the chips and pulse until a dough starts to form.
  3. Once everything is well mixed, line an 8X8 pan with parchment paper leaving enough room for some paper to stick out the sides.
  4. Working carefully, spoon the dough into the pan until it is spread out evenly.
  5. The dough will be very sticky and wetting the spatula a little helps move it around better.
  6. Once the batter is evenly spread, press down with the parchment or your spatula to pack it tight.
  7. Sprinkle the chips over the top and gently press them in. Place in the fridge to set for a few hours.
  8. When it’s ready, lift the whole thing out with the extra parchment paper and cut with a pizza cutter.

    1. Thank you! I'm sorry I don't know. I think you can plug the recipe into My Fitness Pal for a rough estimate.
  1. These larabars are amazing! So easy to make & taste better than store bought. Even my husband is crazy about them & refused to let me tell him what's in them so he doesn't believe they're healthy. I make at least 1 batch a week. My kids ask for them every day.
  2. So, I made these and the "dough" I call it, it super good! That said, I cannot make it set enough to make into bars and I even added some wheat germ hoping that would thicken it up. I know that is not a Larabar ingredient and adds gluten but I didn't care about that. It was just a couple days ago and is in my fridge. Any suggestions? I did use roasted/salted cashews and good quality dates. I'd just keep adding flour like ingredients but that would ruin the flavor I think?
    1. Sorry it's not setting up for you. :( Maybe you over-mixed and turned the nuts into a nut butter consistency? Why don't you try sticking them in the freezer instead.
  3. I made these a few days ago. Super impressed! Great tasting and very very easy! Moving on the peanut butter ones next! Thanks for sharing these with us! I will not be making these in front of my 10 year old since he thinks he doesn't like dates. He loves these bites though!
  4. Thanks for fabulous recipe. Quick Question. Do you add the chocolate chips in with mixture as on the Video you do. However, written recipe says press into mixture at the end. Which works best? Thanks
  5. Just made the chocolate chip cookie dough bars and they look amazing! I’ll definitely be keeping this recipe and trying some other ones you have. Thanks for the tip to wet the spatula to spread them out in the pan! Just curious if you have ever added egg white protein powder to these with a bit of extra water?
