Blueberries and Cream Popsicles

Here in Texas it’s a steamy one hundred degrees this hot summer day.  So, what do you want most on hot days?  Homemade Blueberries and Cream Popsicles!  Kids love food on a stick and ice cream is no exception.

My kids love it.  But, let’s face it, most store-bought frozen treats are laden with excess sugar and too many chemicals.  Not these Blueberries and Cream Popsicles!

She loves her ice cream!  I love these pop molds too because they have a little tray to catch all the drips.  No mess.  Love that idea!  Well, almost no mess.

She may be messy, but she is so darn cute!  I wanted make this popsicle recipe ever since I saw some Pina Colada Popsicles on The Midnight Baker’s blog.  They looked AMAZING!  I just ran out of pineapple, so I subbed blueberries.  Came out super good, but I am trying her recipe as soon as I get my hands on some pineapple!

Blueberries and Cream Popsicles

Prep Time 5 min Serves 6 popsicles     adjust servings

Creamy coconut milk and fresh blueberries is always a winning combination!

Ingredients

Instructions

  1. Pour all ingredients into a blender and blend for about 90 seconds.
  2. Take a taste, if it’s sweet enough, pour into popsicle molds or smoothie pop molds .
  3. If not, feel free to add more maple syrup and blend for a few more seconds.I think I used 2 tablespoons maple syrup total in mine.

If you don’t have pop molds, you can even make it ice cream, using an ice cream machine . All these options are great. I hope you and your family enjoy them as much as we did. There will be more popsicle recipes coming this summer too!

  1. I love, love, LOVE coconut milk ice cream! My old roommate used to make us vegan ice cream all the time. We would have little ice cream parties in our apartment. It was awesome! These popsicles look delicious. I should really buy some popsicle molds for summertime. Oh, and your daughter is adorable. Kids are so messy. I love it!
  2. Great minds do think alike! Aren't they so good? Can't wait to do more. I can't do any ice creams at the moment bc my husband's chef at his restaurant is 'borrowing' our ice cream maker. Pretty sure I won't be getting it back anytime soon and just need to buck up and get a new one if I ever want to see homemade ice cream around here this summer ;) -Rama
    1. You should get a new one! We make ice cream on a weekly basis in the summer. I have plans for a pina colada ice cream next! :)

  4. These are de-lish! We made them with strawberries. I left the maple syrup out, poured one for myself (I am off of all sweeteners right now), then added the syrup and made the rest for my son. Mine was wonderful even without any sweetener! I wish I had made more for me!!!

  6. I just made these but had to improvise a little. I used about 1/2 cup of fresh blueberries and then the other 1 1/2 cup I used mixed frozen berries. For the coconut milk, I used coconut cream from Trader Joe's instead. It has a much creamier texture and richer flavor than regular coconut milk. I just made these and put them in the freezer... I'm excited to see how they turn out and have a refreshing snack on this hot summer day!!
