Pumpkin Chocolate Chunk Cookies

Now that it’s September, in my world it’s okay to bring on the pumpkin recipes!  These delicious pumpkin chocolate chunk cookies are gluten free, contain no refined sugars, and are the perfect way to start out the pumpkin recipe season. This healthy pumpkin chocolate chunk cookie recipe reminds me of pumpkin chocolate chunk cookies I use to buy at Smith’s grocery store in Las Vegas.

Pumpkin Chocolate Chunk Cookies and a Giveaway!

Prep Time 15 min Cook Time 14 min Serves 15 cookies     adjust servings

Ingredients

Instructions

  1. Preheat oven to 350.
  2. Mix all the dry ingredients in one bowl .
  3. Mix wet in another.
  4. Add dry to wet and mix until combined.
  5. Fold in the chocolate chunks.
  6. Drop cookies onto parchment lined baking sheets and bake for 12-14 minutes.

These cookies are thick and have a cake like texture. I got 15 large cookies out of my batch. I keep them in the fridge so they last longer. You can also freeze them as well. Enjoy!

  8. Thank you so much for posting recipes that are healthy and flavorful! I was searching for food that I can make, for my granddaughter, for lunch. She is almost 2 and has found out that she can state her preferences and people will pay attention! So far, she has eaten everything I have made for her from your blog. I also appreciate your suggestions for making the recipes vegan. How exciting that you get to host this KitchenAid mixer give away! I love mine, but it is well-worked and has begun to make funny noises (I guess we all do that when we get to a certain age!). She also doesn't run as fast as she used to (I can also relate!), but she is still chugging away, God bless her! If I won, I would retire the old girl and just bring her out on special occasions, like when I'm making multiple batches of cookies at Christmas time or baking with the kids.

  10. No competition for me in Aus but that's ok! :) I actually made these this morning and they are wonderful!!! I couldn't get the oat flour at short notice so I crossed my fingers and just used 2 cups of organic spelt flour instead. Everything else the same - I got 17 very generous cookies from using a heaped desert spoonful. They are light and cakey but moist. I can't help but think these would also be fabulous with chopped dates or macadamias (for a nut-ok version) or some of both! So many possibilities - so delicious - and so easy to make! Thank you. :)
      1. Oh Pecans! Yes, they would be lovely too. I took my cookies to my sister's (as she is very 'whole food' minded) and they were a HUGE hit with my 3 and 6 year old nieces. I think we'll both be making these regularly in the future. :)

    1. You can use another oil. For the sugar, just replace it with another sweetener like honey or maple syrup. If you use one of those, you will need to slightly decrease the liquid somewhere else in the recipe though.
