Cherry Chocolate Chip Nice Cream.  My family’s challenge lately has been to cook from the pantry, fridge or freezer.  We have so much excess food and we need to get through it all.

That is exactly how this healthy nice cream recipe came about.  I have leftover frozen bananas and leftover frozen cherries in the freezer.  Plus, a HUGE bag on Enjoy Life chips to use up.

Chocolate Chip Oatmeal Bites (Vegan)

Chocolate Chip Oatmeal Bites.  These healthy bites are very kid-friendly and perfect for little hands to grab.  Who doesn’t like chocolate for breakfast?

If you liked my coffee chocolate oatmeal bites, then you will love these!.  I actually thought about putting the coffee extract in these and then decided not to at the last minute.

If you like chocolate for breakfast I highly recommend my Chocolate Almond Butter Overnight Oats too.

These little oatmeal bites are gluten free and vegan.  If you are not a fan of chocolate, some chopped dates or raisins would be good as well.

If you went with the dried fruit, I suggest adding some cinnamon too.   That would be good.  These little bites are great for on the go and they freeze well too!

Pumpkin Chocolate Chunk Cookies

Now that it’s September, in my world it’s okay to bring on the pumpkin recipes!  These delicious pumpkin chocolate chunk cookies are gluten free, contain no refined sugars, and are the perfect way to start out the pumpkin recipe season. This healthy pumpkin chocolate chunk cookie recipe reminds me of pumpkin chocolate chunk cookies I use to buy at Smith’s grocery store in Las Vegas.

Prep Time 15 min Cook Time 14 min Serves 15 cookies     adjust servings

Instructions

  1. Preheat oven to 350.
  2. Mix all the dry ingredients in one bowl .
  3. Mix wet in another.
  4. Add dry to wet and mix until combined.
  5. Fold in the chocolate chunks.
  6. Drop cookies onto parchment lined baking sheets and bake for 12-14 minutes.

These cookies are thick and have a cake like texture. I got 15 large cookies out of my batch. I keep them in the fridge so they last longer. You can also freeze them as well. Enjoy!

Healthy Pumpkin Chocolate Chip Muffins

Here is yet another pumpkin recipe  I just love muffins, so it was only fitting I would make healthy pumpkin chocolate chip muffins.  They make me feel like I am eating cake for breakfast. 🙂   Growing up in Boston, we had a Dunkin Donuts on every corner.

One of the things I loved there was the pumpkin chocolate chip muffins.  Then one day I looked up the nutrition facts. They have 600 calories and 26 grams of fat.  Ouch!

Healthy Oatmeal Cookies!

I made you healthy oatmeal cookies! Just because I try to eat healthy doesn’t mean I stopped loving cookies. One of my favorite recipes before I started eating healthy was my grandmother’s oatmeal chocolate chip cookies. The original recipe called for processed flours and processed sugars.  These healthy oatmeal cookies are much better for you.  So have a couple. 🙂

I loaded mine up with spices so that I would need to add very little sugar.  Did you know that spices like cinnamon, nutmeg and vanilla make foods appear sweeter than they are.  It’s like a trick of the senses or something.

  2. Mix all the wet ingredients in one bowl .
  3. Mix dry in another.
  4. Add wet to dry.
  5. Fold in chips.
  6. Bake on a lined baking sheet or greased pan for about 13-15 minutes or until edges come out lightly browned.
  7. These are so good that I eat at least 3 of them when they first come out of the oven. So does Meadow.
