Pumpkin Chocolate Chunk Cookies

Now that it’s September, in my world it’s okay to bring on the pumpkin recipes!  These delicious pumpkin chocolate chunk cookies are gluten free, contain no refined sugars, and are the perfect way to start out the pumpkin recipe season. This healthy pumpkin chocolate chunk cookie recipe reminds me of pumpkin chocolate chunk cookies I use to buy at Smith’s grocery store in Las Vegas.

Pumpkin Chocolate Chunk Cookies and a Giveaway!

Prep Time 15 min Cook Time 14 min Serves 15 cookies     adjust servings

Ingredients

Instructions

  1. Preheat oven to 350.
  2. Mix all the dry ingredients in one bowl .
  3. Mix wet in another.
  4. Add dry to wet and mix until combined.
  5. Fold in the chocolate chunks.
  6. Drop cookies onto parchment lined baking sheets and bake for 12-14 minutes.

These cookies are thick and have a cake like texture. I got 15 large cookies out of my batch. I keep them in the fridge so they last longer. You can also freeze them as well. Enjoy!

  1. These cookies look absolutely delicious! More and more I am diving in to the world of healthy and whole foods. My husband has suffered for years with digestive tract issues that are finally subsiding...WHO KNEW it was because we have been loading our bodies with...well...JUNK!! It has been a gradual process de-crudding our diet...but I am really into it now. I have two handsome boys ages 7 and 2, and I want them to understand the importance of putting good things in!!   3. Awesome! I LOVE the pink! On the Raffle, it says to tell you why I want to win. I want to win because I don't have a mixer; in fact, I don't have any kitchen appliances other than a coffee maker, if that even counts. I'm very poor. I love to cook, and I switched to a gluten-free, vegetarian, organic, non-GMO diet about a year ago to help with my substantial health issues (lupus, among other things). It has really helped but with all my money going towards medical expenses and bills, I can't afford kitchen appliances, which really decreases the food I can make. Sorry to be all depressing, but that's why I want to win, personally. You've got some great recipes on here! I loved the idea of the chocolate peppermint balls, but I hate coconut. Maybe I can substitute that with something else. Coconut's just not my thing, but I LOVE Junior Mints!   4. I would love to win because I don't have a stand mixer & I would bake a lot more if I did. Since I have my own apartment now I have been cooking more, but I always have to look to find recipes that don't require a mixer - which is challenging sometimes.
  5. These are my favorite cookies EVER!! Can't wait to try them!! I would like to win the mixer because I am trying to eat healthier and loose weight for my daughter. I am over weight and have struggled with weight issues including anorexia my whole life (I am 26 years old) . I need and want to teach my daughter and future kids better eating habits than I have.   8. It would be great to have a mixer again. A few years ago I gave mine to the church to help with preparing meals for Senior citizens. I have had to stop making items that need a mixer because of arthritis in my hands. Whomever wins will receive a wonderful gift!!!
