Now that it’s September, in my world it’s okay to bring on the pumpkin recipes!  These delicious pumpkin chocolate chunk cookies are gluten free, contain no refined sugars, and are the perfect way to start out the pumpkin recipe season. This healthy pumpkin chocolate chunk cookie recipe reminds me of pumpkin chocolate chunk cookies I use to buy at Smith’s grocery store in Las Vegas.

Ingredients

Instructions

  1. Preheat oven to 350.
  2. Mix all the dry ingredients in one bowl .
  3. Mix wet in another.
  4. Add dry to wet and mix until combined.
  5. Fold in the chocolate chunks.
  6. Drop cookies onto parchment lined baking sheets and bake for 12-14 minutes.

These cookies are thick and have a cake like texture. I got 15 large cookies out of my batch. I keep them in the fridge so they last longer. You can also freeze them as well. Enjoy!

  1. In case my children have inherited my predisposition to cancer, I am trying to find ways to get cancer fighting foods into their diet and this mixer would help. I grew up eating healthy and was diagnosed with breast cancer at age 39. My children refuse the healthy food that were the staples of my childhood, because my husband refuses fruit & veggies, enabling them to do the same. This mixer could help me add cancer fighting ingredients into muffins and other baked good they will gobble down. Whether or not it will help stave off cancer, at least it will make me feel better! :)

  2. Why do I want to win? Well, my best friend since 6th grade is getting married and she would LOVE to have one of these.She has finally found a man that loves her for her and her struggles with eating healthy and weight. She took his kids just as she does her own and treats them better than they have ever experienced. She works with mentally ill people and has an extremely difficult, draining and underpaid job. This would make her world a bit brighter each time she uses it, cooks/bakes with it and especially with the holidays coming around...She does so much for everyone else.

  3. I'd like to win this mixer for my son. He is an amazing cook and even bakes his own bread. He shops at a co-op and farmers markets, and is very health-conscious. I'm so proud of him :)

  4. Oh my to win a KitchenAid stand Mixer what a help this would be when it comes to making most anything in the kitchen. Especially when I make the holiday treats of which I make a lot this would be such a help.

  5. My husband bought me a Kitchen Aid 26 years ago...but it fizzled last year. I miss it so much! The dough hook attachment was used at least once a week for making our Saturday night pizza and I had the attachment for grating cheese for the pizza too! Thanks for this chance to get a new one!

  14. I bought my mom one of these for Mother's Day last year, and I wish I would have bought myself one! She uses it all the time... but I have gotten some ridiculously delicious treats out of the deal at least. I always try one new recipe every weekend, so this would be amazing for me!
