Pumpkin Pie Overnight Oats

Pumpkin Pie Overnight Oats.  My mind is buzzing with all kinds of new pumpkin recipes!  Naturally, I had to do one with overnight oats.

My favorite breakfast lately is overnight oats. So easy.  Even my daughter can make these.  You can make up 5 at a time for healthy breakfasts all week long.  No cooking even required!

It’s a great recipe to try with your little ones.  If you like a smooth oatmeal, use rolled oats.  If you like a crunch to your oatmeal, use steel cut oats.

  1. Pour all the ingredients into a jar and mix very well.  I make 5 at a time and they last all week!  Great for those busy mornings.  I think these would also be awesome with some chopped pecans too.  Enjoy!

      1. Well I tried both oats and the rolled weren't too soft after one night but if I was making a weeks worth I would choose the steel cut oats. I tried the apple cinnamon flavor and the chocolate almond butter flavor. Can't wait to try the pumpkin!

  6. This looks amazing! Two questions... In your video you said you buy spices in bulk. Where do you buy from? Also, I have never worked with pumpkin. Is this pumpkin from a can?
    1. Yes, you can buy spices out of the bulk bins at most health food stores. It's so much cheaper! I used pumpkin from a can in this recipe. Farmer's Market Organic makes a BPA free can. I buy their brand of pumpkin. I also like to use fresh, but if you go that route, you will need to puree it before using to make sure it's not stringy.
  7. I made a version of this last night for this week's breakfasts. So good! I had pumpkin pie spice, so I used that instead of measuring the individual spices. It worked out ok. :)
