Pumpkin Pie Overnight Oats.  My mind is buzzing with all kinds of new pumpkin recipes!  Naturally, I had to do one with overnight oats.

My favorite breakfast lately is overnight oats. So easy.  Even my daughter can make these.  You can make up 5 at a time for healthy breakfasts all week long.  No cooking even required!

It’s a great recipe to try with your little ones.  If you like a smooth oatmeal, use rolled oats.  If you like a crunch to your oatmeal, use steel cut oats.

  1. Pour all the ingredients into a jar and mix very well.  I make 5 at a time and they last all week!  Great for those busy mornings.  I think these would also be awesome with some chopped pecans too.  Enjoy!

  1. We tried these and they were amazing! We also did some of the coconut vanilla ones, and they were also very good! I have a question about the coconut butter - mine is very crumbly (Artisana). When we made the coconut vanilla oats, there were chunks of coconut butter throughout, which was kind of delightful. If I heat it up, will it melt and mix through better?
    1. Glad you liked them! Yes, if you heat the coconut butter too much it will get too thin. Heating it just a bit should be okay though.
  2. Just made this, but I varied the oats by 1/2 amt rolled oats and 1/2 amt steel cut oats because I like the subtle crunch of the steel cut but I also wanted a softer texted (just my preference). I ate it warmed up, so yummy (: The flavors reminded me of the thanksgiving pumpkin pie! I love your clean overnight oats in a jar. It's so easy to make, delicious and yet so nutrient dense for us.   3. Good morning! I have never seen an oatmeal that you don't cook. I use steel cut oats all the time, what is the difference in texture between cooked steel cut oats and this preparation of oats?
    1. Since the steel cut oats sit in milk overnight, they do get soft enough to eat. They retain a slight crunch that I like. If you like more of a smoother oatmeal, I would suggest using rolled oats.
    2. One of the other ladies here said she tried 1/2 steel cut and 1/2 rolled, so I tried it that way. It was really good. The steel cut oats get chewy.
  4. Have you had good success at doubling or tripling this recipe? I have 8 kiddos, my hubby and me. The thought of making up and finding a spot for 10 jars is not a good one. :)
    1. You can certainly make a larger batch and throw it in one container. I have never tried, but I don't see why it wouldn't work. :)

  7. Hi... I love your recipes and your lovely helper...the great thing about putting the oatmeal in the mason jars is that I don't use a microwave,so I put the jars in a pot, pour boiling water to cover and let them warm up while I shower or get ready. Thanks from Toronto
  8. just put these together for my little man's breakfast in the morning! When you take them out of the fridge in the morning, so you just have to heat them up or do they still need to be cooked?? thanks for the great recipe!
  9. I LOVE overnight oats. I look forward to eating them every morning - it's what gets me out of bed. Pumpkin is great for the fall and cinnamon/blueberry is my favorite in the summer. Your photos are stunning!
  10. To save on calories, I made this with 1/2 cup regular oats and 1/2 cup water instead of milk. I also used raisins instead of dates. It turned out great and was very good. Thank you for sharing this.
