Gingerbread Baked Oatmeal

Gingerbread Baked Oatmeal. Now that Thanksgiving is officially over, I feel it’s time to spread the gingerbread love with some more vegan gingerbread recipes!

Currently, I have a Gingerbread Overnight Oats recipe as well as a No Bake Gingerbread Cookie recipe, so this gingerbread recipe fits in nice.

Baked oatmeal is so great.  It’s the oatmeal you can take on the go.  This is a very easy gingerbread recipe that takes very little time to make.

These are freezable as well, so feel free to double the batch and freeze some.  That way they can be for those mornings when you need a quick breakfast on the go.

Prep Time 10 min Cook Time 15 min

Ingredients

Instructions

  1. Preheat the oven to 350. 
  2. Mix all the dry ingredients in one bowl .  Mix wet in another.  Add wet to dry and mix well. 
  3. Spoon batter into lined muffin pans and press down well with the back of a spoon.
  4. Bake in the oven for 15-17 minutes. 
  5. Wait until they are completely cooled before removing them from the pans.

I used jumbo muffin pans and got only 4. You can probably get double the amount using standard sized muffin pans .

These should last a week in the fridge and longer in the freezer. And don’t forget, you can use gluten-free oats to make them gluten-free. Enjoy!

    1. Goji berries are a super food. http://altmedicine.about.com/od/completeazindex/a/goji.htm You can also replace them with cranberries if you like.
  1. Thinking about making this in the dehydrator as regular granola. I guess I could try it in my silicone cupcake molds in the dehydrator.
  2. I never have applesauce on hand, no one likes it just like that. Do you think perhaps organic baby food apple sauce would work? No waste, small containers. Also, are the berries dehydrated? Would cranberries be dehydrated? Could you use frozen blueberries or dried mangos? I'm trying to figure out what I could do til I can find a store that sells goji berries (or amazon) or figure a flavor that would work. Thanks as always!!!!
    1. I think the baby applesauce would work fine. I used dried goji berries. If you were to use cranberries, I would used dried. The fresh ones are very tart on their own. Dried mangos could work too. Let me know what you end up using.
      1. I just read an article on different sweeteners and Yacon is a South American root vegetable and comes in a syrup or powder and is low-glycemic, low-calorie sweetener. It says the syrup tastes similar to molasses.
  3. If you put these in the freezer - what is the best method of defrosting them? I intend to use them if the kids sleep in so there would be limited time. Cheers
  4. Hi Melissa Your muffins look delicious! I cant wait to try them! What is a serving size on these muffins? Any idea on the calorie content? Reg size 12 or 6 large. Just recently started The Daniel plan diet. I'm really enjoying whole foods and am not missing junk food at all!
