Healthy Mint Chocolate Chip Ice Cream (Vegan)

I am a big fan of homemade ice cream.  This Mint Chocolate Chip Ice Cream is the bomb!  This mint chocolate chip ice cream is also dairy free, gluten free and vegan.  This peppermint chocolate chip ice cream recipe is even paleo approved.

It’s also creamy delicious.  I highly recommend getting an ice cream maker if your budget allows.  It pretty much pays for itself after a few batches.  Have you priced organic, healthy ice cream lately?  Way too expensive for me.  That is why I make my own ice cream recipes.

I make my mint peppermint ice cream recipe with coconut milk.  For those of you that hate coconut, don’t worry.  You can’t taste it in this at all!  All you taste in the mint and little bites of chocolate chips.

The best part about this ice cream is that it only has 4 simple ingredients! Super simple.

  1. Make sure you ice cream bowl has been in the freezer for 18 hours.
  2. Mix the coconut milk, maple syrup and peppermint extract in a medium sized bowl .
  3. Pour contents into the ice cream machine and turn on. It should take about 15-20 minutes to make ice cream.
  4. When the ice cream looks very close to being done, add the chocolate chips and use a spoon to guide the ice cream around so the chips get mixed in evenly.

Recipe Notes

The ice cream will be a soft serve consistency. If you like a harder ice cream, stick it in the freezer for an hour. I store mine in this tub . The ice cream will harden a lot once frozen, so if you plan to eat some, pull it out about 30 minutes prior to eating. If you don't have an ice cream machine, you can make this recipe into popsicles. I like these molds . Enjoy!

    1. You might be able to make it as popsicles. Or you can try pouring the mixture into ice cube trays, freezing and then blending?
    2. Yes you can! Blend all the ingredients together and place the bowl in the freezer. Every 20/30 minutes take the bowl out of the freezer and mix it with a spoon and then place it back in the freezer. Do this for about 4 or 5 times. Enjoy!

    1. Hi, if you can have cashews, blend 1 cup raw cashews with 1 cup almond milk, and make the balance with almond milk to make 2 cups. Proceed with recipe. If you cannot have nuts at all, you can use rice or hemp milk with tahinni, but you will have a sesame flavor unless you use a lot of mint oil. Who knows, you may like the flavor fusion?
  2. I am just starting to learn to cook healthy. I'm not familiar with coconut milk or vegan chocolate chips. Are these items I need to get from a whole food store? I have tried recipes calling for coconut oil; and I'm still learning what is a good product and what words like refined mean. It's very easy to get a product very different than what you're really trying to achieve.
    1. You can find the canned coconut milk at almost every grocery store. It's usually in the isle with the international foods. If you are not vegan, you can use whatever chips you like. I hope that helps. :)
    2. Vegan chocolate chips from Enjoy life are usually found with the regular chocolate chips, baking isle. Some store carry them with all of the gluten free items as well.
  3. Last time i tried your strawberry ice cream recipe. First thing that I didnt like was you said it would take about 15 min to start to firm up in the machine it took like 5, and then it wasn't really creamy it was more of a not so dense icy texture,and i let the mix sit in the fridge for awhile before i made it, Second that coconut flavor with the maple syrup and vanilla beans didnt do the job,it was bitter,and face quency..=/..What did i do wrong?
    1. It sounds like you didn't have enough fat. Maybe you should try adding some coconut cream or using a coconut milk with more fat.

    1. I include all of it. Mine always comes out creamy. Are you using the full fat canned coconut milk? Almond milk comes out icy I agree.

I am going to try this mont chip recipe because I have heard fairy is too Hugh in allergens , period ..puts THE immune system under stress.....frustration, because I like yogurt; am investigating the size of protein molecules IN yogurt, verses homogenized milk...it is the size of the milk molecules, that the immune system senses as a foteign body, thus always keeping it under stress
